Auricularia auricula is delicious, rich nutrient, not only finest cuisine in meals, but also treasure in medicine,with effects of clean lung, lower cholesterol.The study shows that Auricularia auricula contains large amounts ofβ-1,3-glucan. A. auricula oligosaccharides are degradated byβ-1,3-glucanase fromβ-1,3-glucan. Auricularia auricula oligosaccharides can lower blood sugar, lower blood lipid, anti-thrombotic, anti-tumor and have other biological functions. Auricularia auricula oligosaccharides have great application prospects and play a huge role in economic development and advances in medical and health research. The topic consistent with the current needs of the community, and is an important research topic with theoretical value and applied value.Theβ-1,3-glucanase was isolated from digestive gland of scallop by precipitation with 80% saturation of (NH4)SO4, ion-exchange on DEAE-52 cellulose and Gel filtration chromatography on Sephadex G-100. SDS-PAGE showed thatβ-1,3-glucanase had a molecular mass of 157 kDa. The enzyme had optimal activity at pH 7.0 and 30℃. The enzyme had apparent Km values of 13 mg/mL by Lineweaver-Burk plot. The oligosaccharides were characterized by TLC, chromatograph of Sephadex G-100 and IR spectroscopy. Antioxidant activity of oligosaccharides from A. auricula was evaluated using 1,1-diphenyl-2-picrylhydrazyl (DPPH), hydroxyl radical and pyrogallol. The results showed that oligosaccharides from A. auricula have distinct antioxidant capacity. The oligosaccharides from A. auricula were co-cultured with three kinds of bacteria, the results showed that they can stimulate growing of Lactobacillus and inhibit growing of Escherichia coli, Enterobacter aerogenes.
