With the rapid development of the catering industry, food residue has become a garbage major component of the municipal refuse, and it has more and more remarkable influence to the urban environment and resident's life health. This article in view of Chongqing area diet characteristic and dining waste residue principal constituent, using mixed bacterias solid state fermentation, it can product the high protein feed with the waste residue. This method can use the nutrient content of the residue fully, in the degradation of cellulose and grease at the same time, can improve the fermentation products of crude protein content, it will effective solve protein feed shortage to ease farming industry , while reducing environmental pollution and epidemic diseases.The experiments adopt Aspergillus niger, Aspergillus oryzae, Endomycopsis, Geotrichum candidum, Yarrowia lipolytica, Candida tropicalis 1, Candida tropicalis 2, Phanerochaete chrysosporium from eight species of single bacterium found in the fermentation.,and screen out the bacterias which can enhance fermentation product protein content effectivly. Preparation of mixed bacterias and find the best allocated proportion of the bacterias;Then through the temperature, the moisture content, the vaccination quantity, the pH single factor experiment and the orthogonal test, determined the compound of the mixed bacteria ferment best technological conditions scope. Contrapose the characteristic of high fat content in the residue of Chongqing area .We analyse fat content, rate of water content, the vaccination quantity and pH,which influence ferment and the degradation of fat.And then we chose the best technological conditions of fermentation of composite bacteria.Finally carries on screening through the orthogonal experiment to the supplementary material, and find the best increase ratio.The experimental results show that the composite bacteria which has good fat degradation rate and the higher protein content are Geotrichum candidum, Yarrowia lipolytica, Phanerochaete chrysosporium and the proportion of three bacteria is 3:3:2; the best technological condition is that the vaccination quantity is 17.5%, fermentation temperature is 30℃, the moisture content is 65%, pH is 6~7,fermented time is 80h. The fermentation products is that PH:6~7, Salinity:1%~2%, grease content: 2%~3%, cellulose content:1%~2.5%, the content of total protein:38%~42.4%,the content of soluble protein:3mg/g~4.5mg/g, the moisture content≤5%.
