Electronic tongue is a kind of chemical analysis instrument. It is composed of an electronic chemical sensor array that has partly specificity and a proper pattern recognition system. It can be applied to recognize single or multiple solutions. Objective needs, present situation of sensor technique and people span of apprehension to gustatory process decide come into being and development of electronic tongue. After solution information been obtained from taste sensor array and information preprocessing and feature extraction, the process to this information is the other one primary content.Firstly, this paper introduce the biology of gustatory, then the notion and development of electronic tongue, the structure and development survey of artificial taste sensor system, the importance and development survey of electronic tongue signal process.Chapter three introduce the algorithms and software used in the experiments. The main algorithms include neural network, chaos, PCA (Principle Components Analysis) and PLS (Partial Least Square). LABVIEW and MATLAB are used in the experiments.Three different electronic tongue systems are introduced in Chapter 4, 5 and 6. They are electronic tongue based on chaotic dynamic, voltammetery, and hybrid tongue. The reason why we designed electronic tongue based on chaotic dynamic is that chaos is sensitive to the initial parameters. When different taste substances are added to the solution, the peak interval series of membrane oscillation are not the same. So do the atractors. We can separate the solutions. The voltammetery electronic tongue is used in drinking specification. The responses of the multi-electrodes are measured and the result is analyzed by using PCA. Hybrid tongue is usedin detection of heavy metal ions. A new electrode ------chalcogenide glass is used as workingelectrode. The data is analyzed by PCA, BP and PLS, and the results are compared.
