The garlic is the bulb of Allium sativum L. Garlic is a perennial plant that is cultivated worldwide. It is a common food and has curative effect. It is called the nature functional food.Garlic and garlic preparation have curative effect. The extract of garlic by water is a new produce and it has high content of alliin. All iin has particular function. But many garlic preparations have few alliin. Little is known about application research of the extract of garlic by water. The principal purpose of this article is to explore the feasibility of the extract of garlic by water as the novel health food materials. The following is the introduction of this paper:Firstly, to determine component of the extract of garlic by water. The results showed the extract of garlic by water has 1.2% alliin. The garlic has 0.24% alliin commonly.Secondly, to study the toxicity of the extract of garlic by water. Acute toxicity test of mice, Ames test, micronucleus test of bone marrow PCE cell in mice, sperm shape abnormality test of mice, and thiry days feeding study of rats were applied. LD50 of the extracts of garlic by water was more than 20g/kg·bw and it had no toxicity. Results of genetic toxicity test were negative, including Ames test, micronucleus test of bone marrow PCE cell in mice, sperm shape abnormality test of mice. The result of thirty days feeding study of rats exhibited no obvious toxicity.Finally, to explore function of the extract of garlic by water on assay immune organ weights, cellular immune functions, humoral immune functions, mono-phagocyte functions, and NK cell activities. The tests showed that the Joint swelling, the proliferation of spleen lymphocytes, the weight coefficient of the thymus, the numbers of antibody forming cells, theconcentration of serum hemolysin, and phagocytosis function of peritoneal macrophage increased. But it had no marked effects on the cabongranular^ clearance ability, the NK cell activity and the weight coefficient of spleen. The extract of garlic by water has positive immune regulation effects.To sum up, the work in this paper has established a strong foundation for further research on the application of the extracts of garlic by water.
