With the improvement of living standards, more attention has been paid on the quality of life and the healthy diet by people. Therefore, the food security,quality evaluation,authenticity identification were more and more concerned by people. The hotspots of researches is the method with quick and scientific identification and evaluation of foods. The nonlinear chemical fingerprint technology is such a novel method. In this paper the nonlinear chemical fingerprint technology and its application on food identification and evaluation were deeply studied.The food security situation, the nonlinear chemistry and its application, the introduction and development of the nonlinear chemical fingerprint technology were introduced in chapter one of the paper.The principle,thermodynamic systerm,dynamic model and the influence of each factor of the nonlinear chemical fingerprint by using sample dissipative components were studied in the second and third chapter. The results showed that the influences of different samples on nonlinear chemical reactions were different due to the different kinds and content of the chemical composition. Therefore, the relationship between electric potential(E) and time(t) was different. The fingerprint which can be used to the accurate food identification and evaluation is the throng token of the the chemical composition of the complex samples. The nonlinear chemical reaction in the thermodynamics closed systerm away from equilibrium state or the open systerm without the supplement of dissipative substance can be used to determine the nonlinear chemical fingerprint. Under the condition that each factor was control accurately, the fingerprints with good reproducibility can be obtained.In the chapter four, the theory model of general systerm similarity was proposed, and compared with the methods of Euclidean distance, correlation coefficient, included angle cosine. And the similarities between the nonlinear chemical fingerprints of 19 kinds of food samples and the mutual model of Guhanyangshengjing were culculated by the four methods seperately, the results showed that the similarity can be reflected accurately by the gerneral systerm similarity, and the similarity value of the nonlinear chemical fingerprints of the same kind of foods was bigger, and that of different kinds of foods was smaller, which were mapping with the degree of differences in the fingerprints.The characteristics and applications of nonlinear chemical fingerprint technology by using dissipative substence of samples were studied by chapter five. The results showed that the quality of the samples can be evaluated by the fuction relationship between the quantitative information of nonlinear chemical fingerprints and determining dosage of food samples. However, the aucenticity and the kinds of samples can be identified initially by the characteristic of the fingerprints, and the accurate identification can be calculated by the pattern recognition method of gernernal systerm similarity. The technology of nonlinear chemical fingerprint with the characteristic of easy operation, low analysis cost, without pretreatment, is based on the principle of nonlinear chemical reaction, and it is of great importance for the identification of complex samples and suitable for the detection of any complex samples which can be weighted accurately.By the research of the paper, the nonlinear chemical fingerprint technology which was a quick, senstive, accurate, new method for the identification and evaluation of complex samples was further improved, and the great superiority in the identification and evaluation was fully showed by this technology.
