Brassica rapa L., which is called turnip in English, has prosperous root system, superior part intumescence to oblateness pulpa root tuber, looks like a radish.By searching literature, we found the most research was focused on the turnip virus, studies of turnip on food processing and functions have been few by far. This research developed a series of functional food to redeem the vacancy of turnip and plateau hypoxia, it proceed in four aspects of research, now the main research contents and conclusions are summarized as follows:1. Main nutritional components of turnip were assayed. Turnip includes 1.35%crude protein,3.64% total carbohydrate,0.18% total acid. Amino acid, minerals, and vitamins composition of turnip was analysied. The main oranic aicds of turnip are oxalic acid and L-malic acid which were determined by HPLC. By initial bolting, the extraction method of dried turnip was determined as using boiling water as extract solvents twice at 100℃. Then the nutritional and functional components of dried turnip were determined, the extractor includes 15.49% crude protein,41.84% total carbohydrate,39.33% revertose, 2.08% total acid,0.180% flavone,0.952% total phenolic,10.49% trierpene and 12.23% polysaccharides.2. Anti-hypoxic effect of turnip frozen-dry powder on ICR mice was investigated. (?)e doses (0.5,1.0,2.0 g/kg.bw.d) were set to investigate the extension of the mice hypoxia tolerance with Rhodiola rosea (0.28 g/kg.bw.d) as positive control and distilled water as blank control. The survival time of mice in hypoxia under ordinary pressure was the evaluating indicator. Weigh the mice liver and assay protein contents and SOD activity. Results indicated that high dose (2.0 g/kg.bw.d) of turnip powder and positive control showed a significant extension effect on the mice hypoxia tolerance, the effectiveness of 2.0 g/kg.bw.d turnip powder and 0.28 g/kg.bw.d Rhodiola rosea is equivalency; high dose group and positive control had a significant promotion on liver SOD activity; and body weight index and hepatopancreas somatic indices of all tested mice were not of obvious difference. All these indicated that Tibetan turnip can improve mice hypoxia tolerance and the antioxidation capacity of mice in vivo.3. According to the characteristics of turnip, we developed two kinds of turnip beverage, including turnip juice beverage and dried turnip extraction beverage, which both have stable quality and peculiar flavors.4. Human body tasting experiment was designed to affirm the anti-hypoxia function in human body:40 boys divided into 5 groups were arranged to the experiment, named positive control (Rhodiola imbricate root capsule) group, turnip complex capsule group, placebo (starch) capsule group, turnip beverage group and fresh turnip group, respectively. After continuous consumption for 21 days, acute anti-hypoxia time and blood biochemistry index were assayed to reflect the human hypoxia tolerance ability. Results indicated that positive control, turnip complex capsule and fresh turnip could elevate the activity of human blood SOD and CAT activity and so on, eliminate free radicals; turnip beverage could elevate the activity of human blood CAT activity, but little effect on SOD activity; positive control, turnip complex capsule turnip beverage and fresh turnip could reduce MDA content in blood, protect body cells from damage, elevate the ability of human hypoxia tolerance.
