Rose vinegar dreg was the raw material in this paper.The enzymatic hydrolysis products of the process and functional properties and nutrition alingredients were measured and studied.Then the enzyme reactions as alt-ernative source of nitrogen were applied to microbial the medium.To deve-lop a rice peptone products, and to protect rice reduce waste caused by dir-ect discard the waste of resources and environmental pollution, the depth of its utilization and a theoretical basis for the development and technical bas-is were provided in this study.The optimum hydrosist conditions of Alkaline protease was:Temperat-ure56.6℃,pH7.9,the material-liquid ratio1:8,enzyme/substrate1.1%,the time3h. The Degree of Hydrosist reached10.07%.Alkaline protease and Flarourzyme hydrolysis rose vinegar dregs protein were also studied. Results showed that the double enzymatic cond-itions:the temperature56.5℃,2.14%enzyme dosage, enzyme with ratio (Flavouryme/Alkaline protease w/w)0.813, pH7.1, and solid-liquid ratio of1:8under the conditions of enzyme3h, in the process conditions, rose vinegar dregs protein reached degree of hydrolysis of15%.The result showed that dual-Enzyme compound can greatly enhance the hydrolysis of rose vinegar dregs.Hydrolysis in the study, based on the degree of hydrolysis of different protein solubility rose vinegar dregs, emulsifying and emulsion stability, foaming and foaming stability were studied. The result showed that the functional properties of proteins related with the degree of hydrolysis. The emzymatical modification product of Rose Vinegar Dregs protein by SDS-PAGE gelatin electorphoresis were also studied. And the amino acid composition in this study and comparison with reference proteins revealed that the amino acid profiles of the Rose Vinegar Dregs hydroly sates were generally higher in essential amino acids, compared with the suggested pattern of requirement by FAO/WHO for adult humans.Finally, the product of dual enzymatic hydrolysist-rice peptone was used to be nitrogen source alternatives, compared with several different commercial peptones. Experinment results showed that rice peptone was favorable for the growth of certain microorganisms,but not universal.
