Study The Development Of The Microorganism And The Quality Of Fu Brick Tea During The Processing

Fu brick tea, is a pressed dark tea, has a strong de-fat function,and it has become a necessity of life to nomadic people living in border areas. Forming golden flowers in the Fu brick tea is an unique production craft of making Fu brick tea, which is to promote the growth and reproduction of superior microorganism Eurotium cristatum to produce the golden yellow cleistothecium, the popular name "golden flower", its size and quantity in the Fu brick tea are the main symbol for consumers to judge the quality of it. However, The processing of making Fu brick tea is still depended on the experience and sensory evaluation to control, the quality of products is unstable,which has a bigger difference of different batch.The samples of different season were researched by microbiology,enzymology,and modern instrumental analysis, To analyze evolution of microorganism and its quality during the "Forming golden flowers" process. The main results of this study are as follows:1. Analyzing the difference of the microorganisms during the "Forming golden flowers" process comprehensively. The results showed that20different microorganisms in winter and7different microorganisms in summer were isolated.27different microorganisms were identified through the classic morphology and the modern advanced molecular biology.2. Study on the evolution on the surface and inner microbes of Fu brick tea is the first time to find the difference of forming golden flowers. The results showed that water content has a large difference on the surface and inside of Fu brick tea, The water of the surface loss rises quickly,which go against forming golden flowers,but the water of the innner is kept easyly, can be controlled at20%, It is beneficial to form golden flowers. Therefore,The water content of the raw material is controlled at about20%, not too high or low, otherwise, go against forming golden flowers.3. The quality formation of Fu brick tea was analyzed comprehensively in depth by studying the microorganisms,main enzymes and manufacturing techniques.
