The Fuji apple is main variety in our country, its fruit qualities is different considerably in different origins. In order to explore the Fuji fruit quality, sugar content changes of fruits and leaves in different developmental process and the differences of the key enzymes activitives in metabolism of carbohydrate in different habitats, and to provide theoretical basis of improving qualities and suitable cultivation in Fuji apple at Shanxi origin, in Orchards full of Xinshi of Liquan at central Shanxi plain, Fanjiazhai of Fengxiang at northern areas of Weibei area and Zhaoren of Changwu at southern of Weibei area from 2010.05 to 2010.10, picked fruits and leaves a time every 15 days from 30 to 180 days after anthesis, to research the fruit qualities, sugar accumulation and related enzyme activities of apple fruits and leaves in different areas; in Orchards full of Fanjiazhai of Fengxiang at northern areas of Weibei area from 2009.09 to 2010.11, picked fruits a time every 5 days from 9.30 to 11.14, to researched the fruit qualities, sugar accumulation and metabolic relevant enzymes of bagged Fuji fruits. The experiments mainly had the following results:1,The Fuji apple fruit qualities were different in different habitats, synthesizes each qualities indicators comparative analysised, the fruit quality of Fengxiang was slightly better than the other habitats, the fruit quality of Fengxiang and Changwu were obviously better than Liquan habitats; Fuji apple of Liquan habitats had a good qualities afte middle October in the harvest time, the Fuji apple quality of fengxiang and ChangWu habitats were good in end of October in harvest time, the optimal harvest time of bagged Liquanduanfuin Southern habitats of Weibei was from October 20 to 30 and the changfu2 was from October 25 to 30.2,Different regions of Fuji apple fruit have different sugar contents, and the same area in different periods in grown fruit of sugar contents were also different. The fructose, Glucose, sucrose and sorbitol contents of the apple fruit in different regions was lower in flowers after 30d, afterward long time with fruit growth until mature, various sugars contents increased rapidly and reached a maximum in flowers after 165d to 180d. in the later mature period, the various sugars were downtrend, the total soluble sugar content of Fengxiang orchard was higher than the other two orchards, and the total soluble sugar content of Liquan orchard was lowest.3,The total soluble sugar contents of Fuji apple leaves were defferent in defferent habitats,and the fructose, Glucose, sucrose and sorbitol contents in metabolic processes was not also identical in different periods. Compare to the sugar contents of leaves in three regions, Fengxiang orchard> Changwu orchard > Liquan orchard,various sugars contents reached a maximum in flowers after 135d to 150d, and sorbitol and sucrose content were the highest.4,The process of sucrose metabolism in different habitats of Fuji apple fruit and leaves, the changing trends of metabolic enzymes was consistent in different regions, and the change trend was consistent in different Fuji varieties. Through the correlation analysis of sugar content and sucrose metabolic in the fruits and leaves enzymes explained that, in fruit, the SS,SPS and AI activities had a significant positive correlation with fructose, glucose and sucrose contents, SDH and SOX activities had a significant correlation with sorbitol content, controled sorbitol metabolism mainly in fruits; In leaves, SS activity had a significant positive correlation with sucrose and glucose, SPS main controled glucose and fructose synthesis, AI and NI activity had significant or significanter negativecorrelation with sorbitol, sucrose, glucose and fructose contents, SDH and SOX activities had a very significant correlation with sorbitol content.
