Panicum miliaceum L. is a species of Panicum L.of Gramineae. It includes of rich nutrition. It is quite suited for the nutritional demands of modern people. In this paper, water, fat, starch (amylose, amylopectin and total starch), proteins of Panicum miliaceum L.were analyzed by near infrared spectroscopy and antioxidant from grain and bran of Panicum miliaceum L. were extracted with different methods. Through the experiment, we obtained the following results:Firstly, water, fat, starch (amylose, amylopectin and total starch) and protein model was established by near infrared spectroscopy, from the model calibration and external validation results, The model for crude protein and starch of Panicum miliaceum L. is a good model and have a high correlation coefficient. Near Infrared Spectroscopy analysis provides a new method for the quantitative detection of Panicum miliaceum L. nutrient content of seeds.Secondly, antioxidant of grain was extracted with 80% acidified ethanol, 70% ethanol respectively, antioxidant of bran was extracted with 70% ethanol. And antioxidant capacity of grain and bran was evaluated by Scavenging Organic Free Radical DPPH.The results showed, Compared with 70% ethanol extract of grain and bran, antioxidative capacity of 80% acidified ethanol of the crude extract is stronger; Compared with 70% ethanol extract of grain, antioxidative capacity of 70% ethanol of the crude extract is stronger.Thirdly, antioxidant capacity of Panicum miliaceum L. was detected using several commonly detection method of the total antioxidant capacity (T-AOC), hydroxyl radical and anti-superoxide anion (SAFR). The conclusions were:the total antioxidant capacity of bran was significantly greater than the grain, and SAFR of the grain was greater than the bran; the total antioxidant capacity of bran is 0.26 to 4.23 units/mg protein, the total antioxidant capacity of grain is 0.066 to 0.44 units/mg protein; the inhibition hydroxyl radical capacity of bran is 0.48 to 29.41 U/mgprot, the inhibition hydroxyl radical capacity of grain is 1.46to19.68U/mgprot; the inhibit anti-superoxide anion radical capacity of bran is 3.15 to 31.63U/gprot, the inhibit anti-superoxide anion radical capacity of grain is 9.8 to 56.35U/gprot.Forth, Antioxidant of grain and bran was extracted with 70% ethanol, 80% acetone,80% methanol respectively and measured the total flavonoids content and the total phenol content. Significance analysis was carried out of total flavonoids and the total phenol content in different treatment of the same species and grain and bran of the same species. The conclusions were: Grain and bran have higher levels of total flavonoids in Panicum miliaceum L. with extracting by 80% acetone; 06-129 is the highest in the flavonoids content and total polyphenol content of bran in Panicum miliaceum L. with different extracting solvent of 70% ethanol,80% acetone,80% methanol respectively. And it is higher in total flavonoids and the total phenol content with extracting by bran than grain.
