Abstract/Summary:
This study presents two kinds of rapid determination of nitrite in food with new method.Nitrite as food preservatives and coloring agent, can improve the color and taste of food,it has double effects of hair color and preservative, it is included in the national allows the useof one of the food additives. But the nitrite is one of the material in food additive can acutepoisoning. Intake of0.2-0.5grams can cause poisoning, in the human stomach, can beassociated with secondary amines substance reaction, produce the nitrosamine compoundswith carcinogenic, during normal processing conditions are detected with high content ofnitrosamines, while the nitrosamine formation and sodium nitrite is closely related to theusage of. Therefore, testing the nitrite in food is a necessary and important project.The traditional detection method of nitrite, such as spectrophotometry, chromatography,although the results are more accurate.At present, researchers at home and abroad hasdeveloped some new methods for fast detection of nitrite, mainly include hydrochloric acidnaphthyl ethylene two amine method, Gerry reagent colorimetric method, atomic absorptionspectrometry, ion chromatography, polarographic method. Therefore, need a fast and withhigh sensitivity, high selective determination methods of nitrite.1. Potassium permanganate titration: This method is the use of potassium permanganateoxidation, and sodium nitrite under acidic conditions in the redox reaction, according to themapping of the titration curve and combined with the mathematical method to calculate thecontent of sodium nitrite. Through the experiment to determine the best acid and itsconcentration and dosage, the optimal concentrations of sodium nitrite, and the removal effectof coexisting ions NaCl. Finally, using this method on the market several ham sausage forpilot testing, to determine the feasibility of this method.2. Potentiometric titration method: This method is the use of sodium nitrite in theelectrode potential and automatic potentiometric titrator or very popular and commonly usedPH acidity meter to measure the content of sodium nitrite. Through the experiment todetermine the best selective electrode type, optimal oxidation agent and the optimalconcentration of nitrite ion test, apply the mathematical method, as a derivative, two stagederivative to calculate the destination volume, to determine the content of sodium nitrite.
