The rapid determination of vitamin C has important practical significance on foodpreservation, health, diet and human health care. The topic for the detection of vitamin Cin food difficult scene detection, based on light absorption/reflection principle, the use of drychemistry technology to prepare for the rapid determination of vitamin C, optical detectioncard, to achieve the purpose of field testing of vitamin C.First of all, the spectrophotometric method for the optimum choices of fast bluesalt B, phenanthroline,2.2’-bipyridine three vitamin C chromogenic reagent, the results showthat phenanthroline as a sensitive reagent of vitamin C has a fast response, color stability,high sensitivity, to finalize the phenanthroline vitamin C-sensitive reagents. Andphenanthroline, ferric sulfate, amine, NaF dosage optimization studies, sample order, pH, andinterfering substances were also detected, whose results showed that concentrationof4.0dosage of150mg/m L o-phenanthroline μ L, the concentration of2.411amountof150μL of mg/mL ammonium ferric sulfate, pH3to4, based on ultravioletspectrophotometry to determine vitamin C in1mg/mL of-30mg/mL has a good linearrelationship, glucose, fructose on the test results do not interference. Using dry chemicalanalysis techniques in the laboratory-made vitamin C optical sensor strip test and immersiontime, drying time, sample volume, reaction time was optimized, the results show that theimmersion time of30s, dried for1min sample volume of80μ L, reaction time90s, with theportable optical detection equipment, the vitamin Cconcentration in the5to100μg/mL detected within the study provides important experimental evidence, but also for therapid test strips of the other substances in food Stripe has a good linear relationship,correlation coefficient0.968, storage at room temperature for30days. Vitamin C opticalsensor test specificity, precision and reproducibility are good, and UV spectrophotometrycomparison test, two methods correlation coefficient is0.98.The experimental study of vitamin C optical sensor test is simple, rapid, accurate,reliable test with portable optical detection equipment can be achieved on-site detection ofvitamin C. The smooth development of this study provides a basis for vitamin C fast.
