In this paper, the extraction of vegetable protein and oil from Xanthoceras sorbifoliaBunge kernel and Cyperus esculentus by AOT/isooctane reverse micelles was stydied. Theeffects of amount of Xanthoceras sorbifolia Bunge kernel or Cyperus esculentus, extractiontemperature, extraction time, concentration of surfactant, W0, pH and concentration of salt onforward process, and reextraction time, pH and concentration of salt of the fresh water phaseon backward process were investigated by single-factor experiments and uniform design,respectively. The optimum condition of forward process for Xanthoceras sorbifolia Bungekernel were Xanthoceras sorbifolia Bunge amount0.02g/mL, extraction temperature40℃,extraction time100min, AOT concentration0.12g/mL, W016, pH7, KCl concentration0.02mol/L. The protein extraction rate was45.2%, and the oil extraction rate was76.4%. Theoptimum condition of backward process were reextraction time5min, pH11, KClconcentration1.6mol/L. The protein reextraction rate was66.1%. The optimum condition offorward process for Cyperus esculentus were Cyperus esculentus amount0.05g/mL,extraction temperature40℃, extraction time86min, AOT concentration0.12g/mL, W016,pH7, KCl concentration0.02mol/L. The protein extraction rate was61.6%, and the oilextraction rate was85.4%. The optimum condition of backward process were reextractiontime5min, pH11, KCl concentration1.2mol/L. The protein reextraction rate was72.5%atthis condition.The forward extraction of vegetable protein, from Xanthoceras sorbifolia Bunge kerneland Cyperus esculentus by reverse micelles, is a liquid-solid extraction process. Shrinkingunreacted core modle was fitted to this process. The process may be controlled by internaldiffusion, by investigating the effects of stirring indensity and particle size. According to theresults of the effcets of different extraction temperature and time, the kinetics equation offorward process for Xanthoceras sorbifolia Bunge kernel is2.22exp(-2190/T)t=1+2(1-x)-3(1-x)2/3, and for Cyperus esculentus the kinetics equation is2.38exp(-1930/T)t=1+2(1-x)-3(1-x)2/3.
