Bone accounts for about20%~30%of the animal weight. As a by-product of meat processing, its nu-tritional value is very high. Our country is rich of animal husbandry. Livestock and poultry production amount is in the front of the world, so we have rich bone resources. But the traditional processing method is simpler and the majority processing place is mill, which scale is small, means relatively backward, produc-tion cycle long, the health level low and the quality not stable. Especially only some effective components in the bones will be extracted usually, so the added value is very low. All of these are the great waste for the resource. In order to change this situation and promote the development of the deep processing of bone re-sources and the expansion of the market, and realize of the full use of the active ingredients of livestock and poultry bone is of great significance. In this paper the ordinary ox bone will be used as a raw material, using microwave pretreatment, high pressure cooking, and spray drying technology to process the ox bone. Through the determination of physicochemical properties and rapidlysis of bone meal, determine the best match ratio of the soup powder, and instant soup powder as a raw material to develop a new type of ox bone soup. The main conclusions of this paper are as below:1. Orthogonal test on the bone:Determine the optimum parameters of cooking condition as follow: temperature115℃, time60min, the solid-liquid1:2.5. Under these conditions, bone soup solids content is6.19%.2. Obtained through the text, the optimal adding auxiliary materials are maltodextrin12mg, sugar4mg, CMC-Na0.5mg.3. By orthogonal test determining the best technical parameters of spray-dried instant bone meal:mate-rial concentration45%, feeding speed6mL/min, the inlet air temperature90℃, the average the yield of bone soup powder88.79%.4. By orthogonal test, the bone soup as a raw material, the best parameters for ox bone soup seasoning formula (g/10g bone meal) are:salt0.50g; Onion powder0.20g; Ginger powder0.15g; Chicken fine0.10g. The color of ox bone soup seasoning is pale yellow, delicate taste, rich bone aroma.
