Nowadays, the processing industry of bone in our country is composited by the feed processing industry, chemical processing industry and food processing industry, but the food processing industry is relatively weak. In the aspect of food, the key processing technology of bone, new product development lags far behind the market demands to make the bone of food with low-technology、single production、unstable quality which seriously inhibit the development of the processing industry of bone in food in our country. To improve the development of bone resource and expand the market, in this study, a kind of porcine bone meal from procine bone was developed with cooking, enzymatic with microwave and spray-drying. Ascertain the best process parameters about instant bone meal in cooking, enzymatic with microwave and spray-drying by determination of the physicochemical properties of bone meal and bone meal of instant. The main results were as follows:1. The optimum combination of cooking to remove the fat from the porcine bone parameters were ascertained by using of orthogonal test, temperature120℃, time3.5h, solids content1:2, and the dissolution rate of fat is43.06%.2. Research the microwave treatment pretreatment combined with hydrolysis by enzyme of bone meal. The optimum combination of enzymatic processing parameters were ascertained by using of orthogonal test, microwave output power550W, microwave radiation time270s, enzymatic dosag12%, solid/liquid ratio5%, enzymatic time6h, and the degree of hydrolysis is20.61%.3. Compare with three couples of activities (CMC and Maltodextrin、Gum and Lecithin、 Agar and CMC), and ascertain the best one is CMC and maltodextrin, which addition of0.3%and0.2%Respectively, and solid/liquid ratio11%. The optimum combination of spray-drying processing parameters were ascertained by using of orthogonal test, feeding rate7mL/min, the outlet temperature85℃, the drying air quantity35m3/h, and the rate of power yield is87.19%.4. Measure the instant bone meal for calcium content of43.59%; and the instant bone meal dispersion time is19s, the solubility of23.1g.
