Se-enriched germinated brown rice is the brown rice products,which adding sodium selenite solution,then make brown rice germination and Se in the brown rice.Compare Se-enriched germinated brown rice and milled rice, Se-enriched germinated brown rice retains most of the nutrients in rice. During the process of germination, it not only enriched selenium, GABA (γ-aminobutyric acid, GABA) content is also several times higher than germination before, selenium has the effectiveness of anti-cancer, enhancing the immune function of human body,etc. GABA has a variety of physiological functions,such as activate the cerebral glucose metabolism, lowering blood ammonia, lowering blood pressure, promote the secretion of growth hormone,etc. Therefore, it has the important practical significance to optimizate the preparation technology of Se-enriched germinated brown rice and obtained its product.This paper do optimization research the preparation technology of Se-enriched germinated brown rice,and obtained the product which is rich in Organic selenium and GABA. The main results are as follows:1. Adding sodium selenite to the immersion liquid, it can make brown rice germination and enrich selenium in this process. Investigation on the following factors such as:soaking time, soaking temperature, the time of germination,the temperature of germination, make organic selenium which is in the Se-enriched germinated brown rice,and the content of GABA as the index, using orthogonal design and comprehensive scoring method, in order to optimize the main function factor such an content of organic selenium andγ-aminobutyric acid maximize in the selenium-enriched sprouted brown rice. The optimum condition is:immersion time11h, soaking temperature30℃, germination time28h, germination temperature34℃. Under the optimum process parameter,we obtained that it is content0.502mg/kg organic selenium and38.43mg/100g GABA in selenium enriched sprouted brown rice.2.In order to make the Se-enriched germinated brown rice food safety, the change of arsenic content was investigated before and after the selenium enriched sprouted brown rice germination. The result indicated that the contect of total arsenic and inorganic arsenic in the Se-enriched germinated brown rice was less than in brown rice, inorganic arsenic was content0.096mg/kg, total arsenic was content0.217mg/kg. In China,the provision that the standard of rice inorganic arsenic contents is:The content of Inorganic arsenic must not more than0.15mg in every kilograms of rice. Therefore, Se-enriched germinated brown rice is the safe food3.Determine Se-enriched germinated brown rice flour as raw material,we obtain the optimal process parameters of Se-enriched germinated brown rice by drum drying.Using the method of three factors and three levels of quadratic orthogonal rotary, it consisted of three experiment factors including water bath time, temperature, surface temperature of the cylinder,and in order to arrange experiments, test index including content of GABA and organic selenium,and index of sensory, we established the mathematical model which took organic selenium conten (Y1), GABA content (Y2) and the quality of sensory (Y3).as target function. Effect of sensory evaluationof Se-enriched germinated brown rice chips, are the main factors of the surface temperature of the cylinder.4. According to the quadratic orthogonal rotation combination design experiment, in order to optimize the parameter of drum drying technology, effectively guarantee Se-enriched germinated brown rice tablet,which has a good sensory quality,and Se-enriched germinated brown rice in main function factor and the content of organic selenium and γ-aminobutyric acid loss minimization in Se-enriched germinated brown rice chips.The optimum technologic conditions of Se-enriched germinated brown rice by drum drying are:bath time20min, temperature57.5℃, the drum surface temperature121.5℃. In case of these conditions, we obtained the Se-enriched germinated brown rice tablet which taste fine and smooth, refreshing fragrance,it content organic selenium0.423mg/kg, GABA32.53mg/100g,and it can be prepared by warm water5.The differences texture of five Se-enriched germinated brown rice chips were studied, such as Se-enriched germinated brown rice chips adding10%buckwheat, Se-enriched germinated brown rice chips adding10%corn flour, Se-enriched germinated brown rice chips which has selenium-rich germinated brown rice flour, Se-enriched germinated brown rice chips,adding10%glutinous rice flour, Se-enriched germinated brown rice chips adding10%maltodextrin. In terms of four qualitative structure indicators such as hardness, consistency, cohesiveness, viscosity, the decreasing order of this five products is Se-enriched germinated brown rice chips adding10%buckwheat, Se-enriched germinated brown rice chips adding10%corn flour, Se-enriched germinated brown rice chips which has Se-enriched germinated brown rice flour, Se-enriched germinated brown rice chips,adding10%glutinous rice flour, Se-enriched germinated brown rice chips adding10%maltodextrin. so, among these five kinds of products, the most sticky is the Se-enriched germinated brown rice chips adding10%buckwheat,and the lowest sticky is the Se-enriched germinated brown rice chips adding10%maltodextrin.
