Buckwheat (Fagopyrum esculentum) is a dicotyledonous plant of the Polygonaceae family, also known as Wan Nian qiao, which is an ideal grain crop. Buckwheat is rich in nutrients, protein, fat, starch, vitamin, flavonoid, crude fiber, minerals, and other nutritional ingredients. Flavonoid is natural phenolic compounds widely distributed the plant kingdom, which have many biological activities on antioxidant, antiviral, resistance mutations, lowering blood glucose protect the nervous system, improve memory and other physiological effects. Its physiological activity is strong,and the side effects is small. Flavonoid have prodigiouss development space and utilize value in food medicine and light industry.The finished product including propolis, capsule, flavonoids chewing gum, flavonoids toothpaste, ShaJiZhi, etc. Flavonoids of buckwheat will increase after the ultraviolet radiation. According to this characteristic, buckwheat as raw material to this present paper. Researched the change rules of flavonoid content of buckwheat buds under UV stress. And developed its complete formular beverage. It provide the theory basis for the development and utilization of buckwheat. It has important reference value for application and development of buckwheat health products.The main contents and conclusions in the research were as follows:1. Selecting seeds, cleaning, bur picking, soaking seeds and pregermination training is part of the germination of buckwheat. Research has identified the optimum technological conditions of buckwheat seeds germination according to germination rate and sprout potential as evaluation index. Based on the single experiment results, The length of buckwheat buds is about15cm when the germination lasts for seven days.The best germination conditions were as follows:soaking in30℃water for30min, soaking time,9h, sprouted temperature,28℃. And under the above conditions, the germination of buckwheat seeds is best.2. Conclusion for preparation of high yield of buckwheat flavonoids by UV stress: The determination of flavonoids wavelength is510nm. The most flavonoids of buckwheat under irradiation buckwheat buds5h everyday. Flavonoids were 8.008mg/g.Long time and low UV irradiation is beneficial to form and maintain flavonoids of buckwheat. But high UV irradiation is not beneficial to form and maintain flavonoids of buckwheat.3. Put the fresh buckwheat buds into the certain concentration of the protect green agent under the certain scalding temperature and scalding time. The optimum blanching conditions of buckwheat buds and the optimum formula buckwheat sprout beverage were investigated by using the orthogonal design. The results showed that blanching in ZnSO4solution(0.2%T=70℃) for1minute can protect the green best and the buckwheat sprout beverage which contained40%buckwheat sprout juice,8%white granulated sugar,0.16%citric acid,0.5%honey.4. Screening different stabilizer and emulsifier with centyifugal sedimentation rate as evaluation standard.The optimum compound emulsifieris mised sucrose ester and single kennedy ester. The ratio is1:1. The optimum emulsion stability conditions of buckwheat buds beverage were investigated by using the orthogonal design. The best emulsion stability conditions were as follows:xanthan gum accounting for0.08%, sodium alginate accounting for0.10%, single kennedy ester accounting for0.06%, sucrose ester accounting for0.06%.And under the above conditions, the emulsion stability of buckwheat buds beverage is best.5. Research has identified the optimum emulsion stability conditions of buckwheat buds beverage through the different homogeneous pressure. The test use quadratic homogeneous when homogeneous pressure is65℃.The two homogeneous pressure were40Mpa and30Mpa. And under the above conditions, the stability of buckwheat buds beverage is best. Research has identified the optimum sterilization conditions from product color consideration. The temperature of sterilization was115℃,and time of sterilization was10minutes. And under the above conditions, the color is best, and microbiology indicators also accord with national standards.6.
