The Physical properties (Horizontal perimeter,Longitudinal perimeter and proportion), chemical properties (soluble soild,ascorbate,total sugar and tier acids) and oxidation resistance (total phenolics.flavonoids content,DPPH· radical scavenging activity,ABTS radical scavenging activity.·OH radical scavenging activity and the reducing activity)of five orange varietes such as Newhall,Cara cara, Bonanza, Fukumoto, Washington in southern Jiangxi province were studied in this paper.The results showed that time of all varieties into mature and fully mature were as follows:Bonanza,September27th and November6th, Newhall:October7th, November6th, Cara cara:October22th, December31th, Fukumoto:October22th, November20th, Washington:October22th, December1st.total phenol, flavonoid content and capacity of scavenging DPPH·,ABTS·+,·-OH and deoxidization capacity between different varieties during the development, maturation process of fruit also showed a very significant difference and the trend were not the same. Bonanza the maximum of total phenol, flavonoid content, capacity of scavenging DPPH·,ABTS·+,·OH appeared in the mature stage.The maximum of the minimum value of total acid and other indicators of other four navel orange varieties all appeared in the mature stage with the exception of the maximum of the total phenolic content and capacity of scavenging DPPH·,ABTS·+,·OH and deoxidization capacity of Newhall navel orange, content, flavonoids, total phenolic content and capacity of scavenging DPPH·,ABTS·+,·OH and deoxidization capacity of Cara cara navel orange, total phenolics and scavenging ABTS·+,·OH of Fukumoto navel orange and content of total phenols, scavenging ABTS·+,·OH of Washington navel orange appeared before the mature stage.There was significant difference in the individual indicator of ascorbic acid, total phenol, flavonoid content, capacity of scavenging DPPH·,ABTS·+,·OH and deoxidization capacity between differente varieties. The sorts between the various indicator of different species were as follows, ascorbic acid:Fukumoto>Newhall, Washington> Bonanza>Cara cara.total phenols:Bonanza> Newhall>Cara cara>Fukumoto>Washington, flavonoids: Washington> Newhall>Fukumoto>Cara cara>Bonanza, scavenging DPPH·:Bonanza> Newhall> Fukumoto>Cara cara> Washington, capacity of scavenging ABTS·+:Newhall> Bonanza>Cara cara, Fukumoto> Washington, capacity of scavenging OH·:Bonanza> Newhall>Cara cara, Washington> Fukumoto,deoxidization capacity:Bonanza> Newhall> Washington>Fukumoto, Cara cara.
