The active ingredients of natural products have different kinds and contents, ofwhich the hydrophilic substances attract more and more attentions in recent years. The development of hydrophilic active ingredients will promote the evolution andquality control of natural products. Liquid chromatography and mass spectrometry(LC-MS) is more commonly used analytical method. Reversed-phase highperformance liquid chromatography (RPLC) has its limitations, because it’s difficultto separate strong polar components from complex extract. Face to hydrophiliccompounds, Hydrophilic interaction chromatography (HILIC) is often used instead ofRPLC. HILIC, originated in the nineties of the last century, is a more and morepopular analysis and separation mode, and it not only can successfully separatehydrophilic substances, but also could analysis total components. HILIC is composedof polarity stationary phase and mobile phase (water and organic solvents), so polarcompounds have higher solubility than other mechods in the presence of water oracidic solutes. There are many advantages of HILIC, for instance, saving time、highefficiency、 high sensitivity、easily combined with other precision instruments.HILIC-ESI-MS is a combined technology, which is gradually growing into one of themost popular detection methods. Based on the combined technology (HILIC-ESI-MS),we initially explored its establishing process and applications with some kind ofmedicinal and edible products (Mulberry leaves jujube Salvia). Our studys provide a possibility of natural polar components analysis and qualitycontrol with the method of HILIC, which will have an important significance.
