The album,which is the fruit of the plant Canarium album Lour. Raeusch,in thegenus Canarium of Burseraceae,is one of the china Ministry of Health to appointboth of the medicine and edible plants.Study on polysaccharides of album (APS)was not reported.In this paper,the extraction,isolation and property,a preliminarystudy of the structure from album polysaccharide(APS).The results weresummarized as follows:1.The optimum condition with hot-water extraction method with the orthogonalexperiment design showed as follows:the ratio of sample to water was1︰8,thetemperature100℃,the time3.5h,for the two extract. Under these optimumconditions,the extraction ratio of polysaccharide was7.10%.2.The optimun condition with microwwave-assisted and hot-water extractionobtained by the orthogonal experiment design showed as follows:ultrasonic time was60s,ultrasonic power480w,hot-water extraction time was3.5h,95℃,the the ratio ofsample to water was1︰15, for the two extract. Under these optimum conditions, apolysaccharide yield (9.38%) was obtained.3. The optimun condition with ultrasonic-assisted extraction obtained ty theorthogonal experiment design showed as follows: ultrasonic power was855w,110min,solid-liquid ratio1︰10,for the two extract. the extraction ratio ofpolysaccharides was7.66%.4.Determination of the fresh album moisture,which the moisture content was74.8%.5.Removal of pigment and protein respectively with active carbon and reagentof Sevage,Uv spectroscopy displayed the content of pigment and protein have reduced, the content of protein was change into0.25%,with76.19%removalproportion of protein,after freeze drying,the color of power which albumpolysaccharides was change into pale brown.6.Monosaccharide composition analysis by gas chromatography of albumpolysaccharides showed that: album polysaccharides was acid polysaccharideswhich mainly consists of rhamnose,arabinose,galactose,glucose,glucuronic acid, themole ratio was1.00︰6.62︰5.77︰5.64︰3.49.7. Infrarede spectroscopy analysis showed that Polysaceharide form albumconsists of α-structure pyran aldose.8. album polysaccharides98.96%in purity and96.27%in total sugarcontent,with a relative molecular weight of300KDa,the optical rotation was+64.1°at25℃.
