In the past decades, the pig breeding became to the focal point and achieved great progress in the improvement of the dressed carcass percentage and lean percentage. But after that improvement, the pork quality has become to the new focal point. In that case, the pig genetic and breeding researchers have done much work to improve the pork quality. The first step of improvement the pork quality is to lean what’s pork quality and what can work on it. According to the study of the past study, there are so many elements working on the pork quality which include the composition of the muscle fiber, the glycolytic potential (GP), the anaerobic glycolysis after slaughter, the genetic weakness, the management of the pig farm and the nutrition level. In these factors, the anaerobic glycolysis after slaughter is most fashion one and also the theme of this study.This study focus on the pork quality and the factors which work on the pork quality. The pork quality trait, GP and hormones which work on the GP, genes which work on the GP and the glycolysis. Through ELISA, qRT-PCR, digestion enzymes of glycogen and determination of the pork quality traits, analyze the pork quality of the main tissue of different group pigs. According to the result got four main conclusions. First, there are close relationship between t pork quality traits and tissues, the ultimate pork quality traits (24h after slaughtered) decided by different groups. Second, we got the GP of different tissues from different groups and the relation between pork quality and GP; according to the result of the hormones content, the hormones work as alinkage between GP and pork quality traits. third, according to analysis result of the expressions of glycogen synthase, glycogenin-1-like and PRKAG3and the GP the glycogen synthase and PRKAG3are key roles of the GP and the pork quality. Fourth, several genes, which dominated the medium steps of the glycolysis, have been found.In all, this study confirmed that in the process of the GP to pork quality the GP supply material, but the result decided by the jobbers more.
