Carrot seeds commonly known as carrot fruits,have been used as a traditionalUighur medicine to cure ancylostomiasis, digestive disorder, chronic kidney disease,bladder afflictions and skin disorders like burns, furuncles, etc for hundreds of years.In addition, the essential oil extracted from carrot seeds is widely used as a flavoringredient in most major food categories, and as a fragrance component in perfumes,cosmetics, and soaps. In this paper,extraction method of carrot seed oil, fatty acid andtrace elements of carrot seed, fingerprint and antioxidant activity of carrot seed oilwere studied.The research about carrot seed in this thesis included three aspects:(1) Various sampling techniques including hydrodistillation (HD) and solventextract (SE) were comparaed for the gas chromatography-mass spectrometry ofvolation constituents in carrot seed. The results show that, the constutions of thecarrot seeds were different by these two methods, but the principal components of thecarrot seeds had no different, and contain high content of sesquiterpenes and lowcontent of monoterpenes.(2) HS-SPME method combined with GC/MS was used for analysis of thevolatile compounds (VCs) of carrot seeds. The effects of five fibers, sample amount,headspace vial volume, extraction temperature, extraction time and desorption timewere investigated to develop HS-SPME conditions for obtaining the highestextraction efficiency. Under the determined conditions, the carrot seeds were directlyapplied for the analysis. SPME extracts contain lower amounts of monoterpenes andhigher amounts of sesquiterpenes.(3) In this study, seed oil extract yields and fatty acid compositions of carrotseeds grown in Xinjiang were investigated. Fatty acid of oils were esterified andanalysed by GC/MS. Four fatty acid components were characterised.9-Octadecenoic acid was the main fatty acid component in species. Meanwhile, the contents ofnineteen elements were determined by ICP-AES using micro-wave digestion fromdifferent varieties of carrot seeds. The results indicated that there were rich traceelements in different varieties of carrot seeds, the main elements were P, Mg, K, Ca,Al, Fe, the potentially physiologically toxic elements Al, As, Cd, and elements Sewith anti-cancer bio-activity were also found. There were some differences betweendifferent varieties of carrot seeds in elements contents.(4) To establish the method of fingerprint analysis on wolatile oil of the wildcarrot seed by GC to provide reference for quality control of wild carrot seed.Esssential oils were obtained by three extracted menthod, and fingerprints weredetermined by GC. Mutual fingerprint of the essential oils of the wild carrot seedwere established by the alike calculation software of Chinese herb fingerprint spectrerecommended by National Medicine Supervision Administration. Thechromatographic fingerprinting of wild carrot seed samples were over0.97by threeextracted method. The method is reliable and accurate, which can be used for qualitycontrol and identification of the carrot seed essential oil.(5) In this study, we identified the antioxidant activities of essential oil andvarious extracts of the wild and cultivated carrot seeds from Xinjiang. The antioxidantactivities of the essential oils and extracts were evaluated using three different assays,1,1-diphenyl-2-picryl-hydrazyl (DPPH),2,2-Azino-bis-(3-ethylbenzthiazoline-6-sulfonic acid)(ABTS) and reducing power assays. In addition, total phenolic contentsand total flavonoid contents were determined, respectively.
