A Research About Food Consumption Structure’s Upgrade Of China Urban Residents Of Different Income Households

Entering the21st century, food supply becomes abundant, needs become much more diverse. At the same time,food security strategy gradually shift to food safety strategy, the upgrade tendency of food consumption structure become obvious. But there are some disharmonious among consumption structure and production structure, nutrition structure in this transition.Under the background of rapid urbanization, dietary structure is changing, food consumption level of different income households are not balanced,etc.This paper analyse the current situation from the general evolution, consumption structure optimize and the change of consumption structure.Find that:food consumption level of urban residents increases, while the Engel coefficient decrease; Food consumption structure is upgrading, animal food is luxury for the lowest income households,but is necessity for the highest income households. Dining out grow fastly for all the income households; However, since food consumption structure similarity is reducing, the gaps of food consumption level among different income households are enlarging.In order to analyse the reason of consumption structure changc,consumption structure change degrees,the contribution of consumption structure change are used.As a result:according to consumption structure change degrees,the degree is gradually strengthening in milk products, aquatic products and dining out.while weakening in food, starch and potato,vegetable,milk and its products.Aquatic products,dining out are becoming the new consumption hotspot, driving the food consumption to upgrade.Panel data which contains15kinds of food and seven income households are used in this paper. RSLI model is used to analyse the food consumption structure, According to the food consumption tendency and marginal spending flexibility,consumption structure changes from staple food which provide energy to non-staple food, from plants food to the collocation of animals and plants food,from dining in the home to social consumption upgrade.For the lowest income households,fruits,milk and its products.dinning out are1.00,2.17,1.49respectively. It is showed that different income people in the food demand are not identical, we should treated it differently.At last,we got the conclusions:the upgrade tendence of food consumption structure and food social consumption become obvious,different income households have different demand,the gaps between different income households is enlarging,etc.
