This paper investigates the effect of combination of immediate precooling (IP) and controlled atmosphere (CA) on the quality and phytophysiology&biochemistry characteristics of Phaseolus vulgaris L. during storage and shelf period, in order to understand the importance of appropriate precooling and explore practical storage technique. The main results showed as following:1. IP combined with CA could maintain better quality and slow down the physiological and biochemical activities of Phaseolus vulgaris L. during storage.The comparison of the effect of immediate precooling and delayed precooling (6h,12h) on the quality and physio-biochemistry of Phaseolus vulgaris L. during CA and cold storage was made. The lower respiratory rate; higher contents of reduced sugar and chlorophyll, higher activity of CE, smaller accumulation of cellulose, high activities of SOD and CAT, and smaller contents of O2-, H2O2and MDA in the Phaseolus vulgaris L. by immediade precooling were determined, combined with that of delayed precooling (6h and12h) CA stored Phaseolus vulgaris L. After30days storage, the contents of reduced sugar, chlorophyll, cellulose in Phaseolus vulgaris L. treated with immediate precooling and6h delayed precooling both under CA were14.54and12.35mg/g,0.113and0.107mg/g,18.17and19.45mg/g, respectively, the enzyme activity of SOD and CAT were81.59and65.85U*g-1FW,1790.51and1430.2U*g-1FW, the contents of O2-,H2O2and MDA were10.05and12.91nmol/g,1.69and1.84μmol/g,5.71and6.05nmol/g, respectively.The resultes showed that there was difference between CA and cold stored Phaseolus vulgaris L.both immediate procooled and under same storage period. CA was more beneficial to reduce the respirstion, maintain higher contents of reducing sugar and chlorophyll, higher activities of CE, less cellulos. After30days cold storage, the measurements of Phaseolus vulgaris L. for reducing sugar, chlorophyll, cellulose, O2H2O2and MDA were9.79mg/g,0.104mg/g,20.21mg/g,15.97nmol/g,2.01μmol/g, and6.72nmol/g, respectively.2. IP combined with CA could extend the shelf life of Phaseolus vulgaris L. somewhat and showed post-effectiveness.The effect of immediate precooling and delayed precooling (6h,12h) on the quality and physio-biochemistry of Phaseolus vulgaris L. after CA and cold storage was investigated. IP had beneficial effect on maintenance of Phaseolus vulgaris L. quality and inhibition of physio-biochemistry during shelf period. After30days storage+2days shelf life, the contents of reduced sugar, chlorophyll, cellulose in Phaseolus vulgaris L. treated with IP and6h delayed precooling both under CA were6.51and4.58mg/g,0.093and0.082mg/g,20.37and21.48mg/g, respectively, the contents of O2-, H2O2and MDA were14.89and16.91nmol/g,2.03and2.17μmol/g,9.07and10.84nmol/g, respectively.After30days cold storage+2days shelf period, Phaseolus vulgaris L. treated with IP combined with cold storage got rotting, lost its commodity value.3. IP combined with CA was the most effective to maintain the quality and to inhibit physio-biochemistry activity of Phaseolus vulgaris L. both during storage and shelf period, compared with the delayed procooling and without CA storage...
