In this reseach, bacterial cellulose membrane was successfully synthesised usingwatermelon juice as raw materials and fermentation with glucose han M438. The presentstudy mainly investigated and analyzed the functional characteristics of bacterial cellulosemembrane. Defecation function,weight-losing function and hypolipidemic function ofbacterial cellulose membrane were studied by animal experiments. meanwhile,hawthorn-schisandra-bacterial cellulose membrane compound jam was successfullydevelopment. the main results were as follows:(1) The watermelon juice was a natural and efficient raw materials for the production ofbacterial cellulose membrane.This bacterial cellulose membrane was strong and full ofelasticity, with better hydrophily and water-holding ability. Meanwhile,it is a good materialfor the production of food riching in dietary fiber.(2) Mouse model of constipation was established by compound diphenoxylate, thedefecation function of bacterial cellulose membrane was analyzed by the delivery time of redstool, excrement character, dry weight and the percentage of intestinal propulsion. Resultsshow that compared with negative control group (286.4±4.9min), delivery time of red stoolfor the first time of higher and lower concentration treatment group was (226.2±5.5min) and(278.9±2.9min) respectively, concluded that both higher and lower concentration of bacterialcellulose membrane can shorten the delivery time (P<0.05). As to the concentration, thehigher concentration group was better. Compared with negative control group (97.8±4.4mg),the total dry weight of defecation on higher and lower concentration treatment group were(205.3±8.3mg) and (141.3±6.0mg) respectively, concluded that both high and lowconcentration would increased the total dry weight of defecation (P<0.05),and the highconcentration group is more obvious (P<0.05); Compared with positive control group(0.2±0.2mg), there were more wet defecation in low concentration(1.5±0.3mg) group (P<0.05); High and low concentration group mice intestine peristalsis of advance percentagerespectively (58.48)%,(69.19)%, compared with blank control group(55.74)%, highconcentration group could improve constipation mice intestine peristalsis advance percentage(P <0.05).(3) Rat model hyperlipemia was established by high fat forage and the weight-losing function and hypolipidemic function of bacterial cellulose were analyzed. Results showed thatthe growth rate of body weight, the total weight of fat, fat index, cholesterol, triglyceride,HDL-C and the arterial stiffness index in nutrition control group mice were significantlyhigher than the normal control group (P<0.05), indicated that this model was establishedsuccessfully. Compared to the nutrition control group, the treatment group displayed lowerbody weight growth rate, total fat weight and fat index, indicated that bacterial cellulose wasable to inhibit the mice weight growth and the generation of adipose tissue, result in aweight-losing function.Meanwhile, mice in experimental group showed lower cholesterol,triglycerides and arterial stiffness index also, indicated that watermelon juice bacterialcellulose own the ability to prevent the hardening of the arteries and lower the blood lipidlevels in the serum.(4) Choosen hawthorn, schisandra, bacterial cellulose as raw material, konjac gum as thethickening agent, single factor experiment was carried out on the collocation of nutrition,color, texture. the formula was as follows: hawthorn pulp and schisandra fruit pulp quality80:20, granulated sugar20%, bacterial cellulose content25%, konjac gum1.0%, PH3.5,soluble solids content is less than40%.
