In order to meet the needs of people's health care drinks,in order to solve the problem of deep processing of watermelon,the deep fermentation of cordyceps militaris is combined with watermelon brewing.This will not only improve people's health,but also increase the economic benefits of melon farmers.It can also produce a new kind of health care wine with the characteristics of cordyceps militaris and watermelon flavor.This study performed the optimization of the cultivation conditions of cordyceps militaris,optimization of the brewing conditions of watermelon wine,and joint fermentation of health wine with cordyceps militaris and watermelon juice.the results are as follows:1.With the response surface analysis method,the effects of different fermentation conditions of cordyceps militaris on the yield of cordycepin were studied to determine the optimal fermentation conditions: initial pH 7,inoculum size 4.6%,fermentation temperature 26 ?,shaker rotary speed 173r/min,and cordycepin production up to 295.91 mg/L.2.With the response surface analysis method,the effects of watermelon juice wine under different fermentation conditions on the alcohol strength were studied to determine the optimal fermentation conditions: total sugar 26.3%,initial pH 3.5,inoculum size 4%,fermentation temperature 25.2?,and alcohol content up to 15.58% v/v.3.In the step cultured method,when the seriflux of cordyceps militaris accounts for 40% of the total volume of fermentation fluid.the health wine was obtained with alcohol content 12.37%v/v,cordycepin 115.48mg/L,total sugar 47.05g/L,reducing sugar 5.63g/L,total acid 4.27g/L,volatile acid 0.70g/L,methanol 81.67mg/L,and ascorbic acid 104.83mg/L.4.In the synchronous cultured method,when the amount of inoculum size of cordyceps militaris and yeast was both 5%,the health wine was obtained with alcohol content 13.18%v/v,biomass 3.97g/L,cordycepin 56.03mg/L,total sugar 78.87g/L,reducing sugar 14.38g/L,total acid 4.13g/L,volatile acid 0.68g/L,methanol 97.67mg/L,and ascorbic acid 108.23mg/L.5.In the supplement cultured method,when the total cultured days for 10 d,the health wine was obtained with alcohol content 14.03%v/v,biomass 11.70g/L,cordycepin 189.676mg/L,total sugar 40.65g/L,reducing sugar 11.48g/L,total acid 4.44g/L,volatile acid 0.53g/L,methanol 121.86mg/L,and ascorbic acid 107.58mg/L.In this paper,three kinds of compound wine with different taste,different nutritional value and health value are produced by using three different compounding methods on cordyceps militaris and watermelon juice.It can not only satisfy the sensory pursuit of health wine among different people,but also promote the development of social and economic benefits,and provide theoretical support for the development of health wine industry in our country.
