In this paper,60wild Crossocheilus bamaensis were studied for the ratio of flesh in whole body and nutritional composition of muscle. It showed that the ratio of flesh in whole body was65.00%in the fish, and there were72.58%moisture,20.43%protein,3.73%fat,2.25%ash,1.15%non-nitrogen extract,6.37kJ/g energy,31.18J/g E/P in muscle of the fish.16kinds of amino acid were found in muscle, in which8essential amino acids for human needs were0.51%in total amino acids. The essential amino acids index was65.20and valine, isoleucine, threonine were limited amino acids in muscle.4kinds delicious amino acids was32.41%in total amino acids of muscle.5kinds of saturated fatty acids and16kinds of unsaturated fatty acids were found in muscle of the fish. The content of saturated fatty acids and unsaturated fatty acids were36.87%,63.13%(37.14%monounsaturated fatty acids+25.99%polyunsaturated fatty acids) respectively in fat of muscle. Fatty acid content of EPA and DHA were0.12%and3.70%. These results indicated that there are relative high contents of protein or lipid and optimal composition of amino acids and fatty acids in muscle of the fish. Crossocheilus bamaensis is a rich nutrient and delicious food for human being. In recent years, artificial breeding of Crossocheilus bamaensis has not been reported, while wildlife resources have been decreasing. In this study, a scientific assessment was made based on the fish quality and nutritional value, which provides important theoretical foundation for the research of nutritional needs and artificial breeding.
