In this thesis, the mold was isolated and identified from the refined sugar which were gathered from S sugar mill and Y sugar mill and biological characteristics of the mould was analyzed; the main source of the mould in refined sugar was explored according to investigated the environmental conditions and the microbiological status of the S sugar mill into sugar section, desk study was happened in implementation of GMP in sugar mills combined with the current situation of China’s sugar industry.The results as follows:(1)Nine moulds were isolated from S refined sugar and respectively belong to Eurotium, Penicillium and Emericella. Twelve moulds were isolated from Y refined sugar and respectively belong to Eurotium, Talaromyces, Penicillium and Emericella. The strains were grouped into five groups according to morphological identification.The most typical strain was selected to identify the characteristic of molecular biology in each group.The results as follows: c-y-30-2was Eurotium chevalieri;c-y-39-1was Emericella nidulanss;p-y-22-1was Penicillium herquei;c-s-31-1was Penicillium implicatum; p-y-35-1was Talaromyces wortmannii.(2)The optimum temperature for the mycelial growth and spore germination of Emericella nidulanss、Talaromyces wortmannii、Penicillium herquei、Penicillium implicatum and Eurotium chevalieri ranged from25°C to30°C; The results showed that only a small amount of spore Emericella nidulanss germinated under the humidity of68.9%, when the humidity reached84.2%, the germination rate of Eurotium chevalieri was10.00%, the spores of other3moulds could be germinated when the relative humidity is higher than97.3%. The light could promote mycelial growth of Eurotium chevalieri and Emericella nidulanss,and couldn’t effect Talaromyces wortmannii, Penicillium herquet growed better in alternating light and dark conditions, mycelial of Penicillium implicatum growed well under dark conditions. The light can promote the spore germination of the Talaromyces wortmannii and Emericella nidulanss, Alternating light and dark conditions in which can promote the spore germination of the Penicillium herquei.but light has little effect on spores germination of the Penicillium implicatum and the Eurotium chevalieri.(3)The mould was not detected in the mouth of falling sugar, and was detected in ambient air, equipment, floors, walls and vibration sieve sugar scale sampling, especially for Penicillium implicatum、Emericella nidulanss and Eurotium chevalieri. Penicillium implicatum, Emericella nidulanss and Eurotium chevalieri were found in the S sugar mill combined with the second chapter of the paper. So it can be concluded that the mould in the refined sugar wsa correlative with workshop environment.(4)According to the current situation of China’s sugar industry, the necessity and feasibility of the implementation of GMP was analyzed,and some suggestions and comments were put forward for the implementation of GMP from the three aspects of the equipment, the environment and personnel.
