There are many famous brands of liquor in Henan Province; the Well-known brand is as Baofeng,Songhe and Dukang and so on. The Liquor brands have a close relationship with excellent quality. Toimprove the quality of liquor, the key thing is to control aroma components containing in liquor. Thearoma components in liquor are the direct factor to determine the flavor characteristics of wine,identification and analysis of the flavor substances in liquor has also been the focus that researcher’sattention to. Compared with other regions products, the liquor in Henan area is much backward in theresearch project of aroma components, few studies have been reported in the literature. Therefore, studyon the aroma components of liquor, is the first thing to promote the quality of Henan liquor.In this paper6kinds of liquor in Henan area as the research object. A series of methods foridentification and measurement on flavoring compositions in liquor were established. Find out the laws ofsome characteristics of aroma components containing in Luzhou-flavor liquor and Fen-flavor liquor. Theresults are as follows:(1) Using gas chromatography-mass spectrometry, the aroma components of6Henan liquor wereseparated and identified. Using dichloromethane as extraction solvent, liquor aroma substances detectedwith alcohol, acids, esters and other substances.Compare medium-polar column and strong polar column separation. The results show that themedium-polar column separation liquor, alcohol, acids deformity peaks, the peak time was at the first10min and the esters peak time was at15min later, the sharp peaks was between30~45min, the peak of thecomponent was shape and evenly distributed.The use of strong polarity column, esters, acids, alcohol separation in liquor showed a symmetricalpeak shape, components, sharp peak, peak can be evenly distributed on the chromatogram.The sampleswere concentrated10times, six kinds Henan liquor composition identification results show that HenanLuzhou-flavo liquor containing more than40kinds of aroma substances, Fen liquor aroma components30.(2) The method to measure the aroma components in wine by external standard method of gaschromatography was explored,17kinds of aroma components were measured. Liquor sample amount of10mL,50mL of the extraction solvent, the extraction time of1min, extracted3times, the temperature at 25°C or less, the sample was concentrated to approximately3mL, given solvent to10mL, can beobtained stable Liquor sample handling, processing to obtainthe parallel sample RSD values lower than10%. The extraction effect of methylene chloride and anhydrous ether were compared, anhydrous ether assolvent to determine the content of ethyl acetate, dichloromethane doesnot have this effect. Anhydrousether was used as a solvent,17kinds of aroma components in liquor were measured. The linear R2between0.9900~0.9990parallel samples RSD value of less than5%, the recovery rate is between80%~138%.(3)Summarized the laws that the aroma components that constitute of six kinds of liquor. Throughthe comparison of the type and content of the aroma components, the main draw liquor aromacomponents of ethyl caproate, ethyl lactate, ethyl acetate, acids are caproic acid, alcohols isoamylalcohol.Fen liquor content of ethyl caproate, aroma components in ethyl acetate and ethyl lactate, isoamyl alcoholand acetic acid content is also more prominent.The total detection of6kinds of liquor were43kinds ofesters,25alcohols,24acids, very small amount of aldehydes and ketones, alkanes.
