The subject was performed on the basis of early full investigation on the plant resources ofPassiflora edulis Sims and aimed at improving the recycling degree and resource utilization ofthe processing waste of Passiflora edulis Sims, extending its industry chain and increasing thevalue-added products through conducting a research on extraction, decoloration, basiccomposition and physical and chemical properties of the dietary fiber of the peel of Passifloraedulis Sims, which can make an important contribution to the damaged environment caused bythe waste residue emissions. We compared the influences on the dietary fiber of the peel of Passiflora edulis Sims byenzymatic method and chemical method, utilized Box-Behnken response surfacemethodology to optimize extractive craft of SDF of the peel of Passiflora edulis Sims, comparatively chose D301R, an anion resin,as the decolouriser to optimize the decoloringprocess of SDF of the peel of Passiflora edulis Sims, and ultimately analysed the basiccomposition and physical and chemical properties of the DF of the peel of Passiflora edulisSims. It turned out that, the TDF and SDF prepared by enzymatic method had42.04%and119.35%higher net yield than that of the DF prepared by chemical method respectively andthe TDF prepared by enzymatic method had an apparent advantage over the TDF prepared bychemical method in expansion force, water binding capacity, cation binding capacity, sodiumcholate adsorption force and cholesterol adsorption force, and the difference was statisticallysignificant.Box-Behnken response surface method for optimization of enzymatic extraction of peelSDF of Passiflora edulis Sims showed: When the solid-liquid ratio was1:40, thermostablealpha amylase dosage was5.00U/g, the citric acid solution concentration was0.18%and thetemperature of complex enzyme reaction was80℃,the net yield of SDF had a maximum of13.82%.Static adsorption decolorization experiment indicated that, D301R had apparent advantagein SDF decolorization over other decolorants. On condition that pH was3.34, flow rate was1.36BV/h and the height to diameter ratio was11.8, the decolorization efficiency was thebest, when the mixed decolorization rate was75.90%and polysaccharide retention rate was83.59%, using D301R anion resin to dynamically decolor. The research result of the material composition of the peel DF indicated that, the DFwas a high quality DF sources, characteristic of low-fat, low-protein, high pectin content and high fiber content. The SDF had a pectin content of58.46%, total sugar content of82.63%,reducing sugar content of12.74%and β-glucan content of2.34%, which proved solublepolysaccharide to be a major part of the SDF of Passiflora edulis Sims peel. Then the SDF wasa potential resource of pectin because of its rich pectin content. The IDF was rich in fibercontent, including a42.63%content of cellulose,a22.75%content of hemicellulose and a13.82%content of lignin, and it had a potential to be a fiber source. After decolorization, the TDF had a maximum expansion force of7.33mL/g, water holdingcapacity of5.68g/g, water binding capacity of6.83g/g, cholesterol adsorption force of17.78mg/g when pH was2.0, cholesterol adsorption force of13.19mg/g when pH was7.0,sodium cholate adsorption amount of111.67mg/g, unsaturated fatty acid binding force of2.33g/g, saturated fatty acid binding force of2.39g/g, and some of the properties tended toimprove to some extent.
