Flammulina velutipes is both a better nutritional value and health function of edible fungi,But the flammulina velutipes is difficult to storage and transportation under normal conditions, it is easy to appearing the phenomenon of prone to browning, open the umbrella, water loss and decay. In this paper, taking flammulina velutipes as raw material, researching different parts of flammulina velutipes PPO activity, PPO dynamics;Taking respiratory intensity, water content, PPO activity, browning degree and apprasising sense as index to studing the effect of temperature, packaging on storage quality of flammulina velutipes. Testing the material root through different cutting effects of root length is beneficial to the storage quality or not of flammulina velutipes.Through single factor and orthogonal test to finding out the best formula of composite preservative,and through the verification test to inspecting chitosan coating liquid compound preservation is beneficial to the storage or not of flammulina velutipes.The specific research contents and results are as follows:l.The research for the PPO dynamics.Flammulina velutipes handle upper PPO activity was the highest,and in the pH is5.0, temperature is50℃has the highest PPO activity,using Michaelis-Menten mechanism we can educe the flammulina velutipes PPO dynamics equation is:l/V=0.0131/[S]+0.1741. The corresponding kinetic parameters are KM=0.075mol/L, Vmax=5.744U/min.2.The research for the optimal storage temperature. Under the condition of2℃, every indexe of flammulina velutipes is the best and the storage period is the longest.lt is beneficial to the storage of flammulina velutipes.3.The research for the effect of different material root length on storage quality of the flammulina velutipes. Under the condition of material undercut2/3,every indexe of flammulina velutipes is the best,and the storage period is the longest.keeping a small amount of material root is beneficial to the storage of flammulina velutipes.4.The research for the effect of different packaging on storage quality of the flammulina velutipes.Under the condition of350mm×230mm×0.5mm package thickness of the PE bags and micropore bags,every indexe of flammulina velutipes is the best and the storage period is the longest.They are beneficial to the storage of flammulina velutipes.5.The research for the effect of the method of chitosan composite preservative coating the flammulina velutipes.chitosan composite preservative optimization formula:chitosan concentration0.15%, Ca2Cl concentration0.7%, cinnamon oil concentration0.4%,vc concentration0.04%.But the storage effect of chitosan composite preservative coating the flammulina velutipes is worth than the control group without coating,and the storage period is shorter than the control group.The method of chitosan composite preservative coating the flammulina velutipes may Not be desirable...
