Cinnamaldehyde is the main component of the cinnamon essential oil, and is a goodnatural preservative, which shows many bioactivities in recent research, such as antimicrobial,antitumor, antivirus, vasodilator and so on. Eugenol also is an important natural preservative,which is applied to antibacterial, antioxidant, new anesthetic in medical. In this paper, westudied on the antimicrobial activity of cinnamaldehyde, eugenol and their analogues. Therelationship between chemical structure and antibacterial activity were also studied. Under theguidance of this study, using cinnamic and eugenol aldehyde as the precursor, we hope to beable to synthesize or transform the higher biological activity compounds. The main contentswere as follows:Antibacterial activity of cinnamaldehyde and it’s analogues phenylpropyl aldehyde,phenylacetaldehyde, benzaldehyde, propanal, acetaldehyde, Formaldehyde against E.coli,Staphylococcus aureus, Salmonella typhimurium, Streptococcus pneumoniae, Swineerysipelas, Saccharomyces cerevisiae was tested by the plate dilution. The minimuminhibitory concentration(MIC) were from100μg/mL to4000μg/mL. The mimimumbactericidal concentration(MBC) were from200μg/mL to4800μg/mL. Formaldehyde andcinnamaldehyde antifungal indices against Penicillium italicum Wehmer were100%, whenbenzaldehyde was7.5%.The comparison of cinnamaldehyde and phenylpropyl aldehyde, phenylacetaldehyde,benzaldehyde,propanal, acetaldehyde for their effects were tested by the method of oxfordplate. And indicating that compound having a benzyl ring and a long CH chain and aconjugated double bond, possesses much stronger antifungal.Antibacterial activity of eugenol and it’s analogues isoeugenol,4-Vinyl phenol,methyleugenol and eugenyl acetate against E.coli, Staphylococcus aureus, Salmonellatyphimurium, Streptococcus pneumoniae, swine erysipelas, Saccharomyces cerevisiae wastested by plate dilution. The MIC were from400μg/mL to2600μg/mL. The MBC were from600μg/mL to3000μg/mL. Eugenol and isoeugenol antifungal indices against Penicilliumitalicum Wehmer were100%, when eugenyl acetate was0.The comparison of eugenol, isoeugenol,4-Vinyl phenol, methyleugenol and eugenylacetate for their effects were tested by the method of oxford plate. And indicating thatPhenolic hydroxyl was the antimicrobial function. Ortho methoxy can improve antibacterialactivity. The bacteriostatic activity of compound may be related to electrical, hydrophobicity,spatial structure and so on.
