Rice bran is a by-product of rice processing, accounts for about7.5%of the totalquality of rice, the rice annual output of china is around2million tons, which canproduce10million tons of rice bran. Rice bran oil content of rice bran is from15%to22%, protein content is from12~16%. Traditional oil extraction technology seriouslyrestrict the comprehensive utilization of the oil and protein. With rice bran as rawmaterial, this paper studied rice bran oil extraction with enzymatic hydrolysis method,and discussed the enzymatic hydrolysis conditions of rice bran; its hydrolysate ispurified by membrane technology for recycling rice bran protein; this study focused onmaking rice bran oil microencapsule by spay-dying. It puted up series of research on thefactors which effected the process, and optimized the technologic parameters. Theresearch results are as follows:1. Confirm of water enzymatic extraction technology of rice bran oil. rice bran isprocessed by enzymatic hydrolysis, firstly, with free oil yield as examining index, thisstudy determines that the best enzyme is the alkaline protease in the pectinase, neutralprotease, alkaline protease and cellulase enzyme; then, by single factor experiment andthe orthogonal experiment, the enzymatic hydrolysis conditions are optimized,the bestprocess conditions:enzyme adding amount of1.2%, enzymolysis time4h, pH8, theratio of material and liquid1:7, under these conditions, the free oil yield was81.75%,the yield of protein peotides is82.63%. the rice bran oil is grease crystal clear and paleyellow. The rice bran oil reached level3standards of the state.2. Confirm of separation and purication of rice bran protein in membranetechnology. High performance liquid chromatography (HPLC) test showed that theenzymolysis liquid molecular weight peptides are mainly distributed in300~1000Dal,the content of which is82.6~84.5%, Enzymolysis liquid are processed respectively bythe100nm microfiltration membrane and intercept molecular weight300~500Dalnanofiltration membrane secondary membrane processing, the purity of the original lowmolecular protein is96.5,the proportion of the molecular weight distribution in300~1000Dal is up to95%, greatly improving the quality of the peptide.3. Confirm of rice bran oil microcapsules prepared by the spray drying process. Inthe first place, the best combination wall material is determined to (arabic gum+maltodextrin) in three combination wall materials of (gelatin+maltodextrin),(β-cyclodextrin+arabic gum+soy protein hydrolysate) and (arabic gum+maltodextrin),then by single factor experiment and orthogonal experiment, the process conditions areoptimized, the best process conditions: the ratio of arabic gum and malt dextrin1:1, theratio of core material and wall material than1:4, solids concentration25%, dosage ofemulsifier0.3%, the best conditions of spray drying: inlet air temperature220℃, outletair temperature80℃, shear emulsifying20min, under these conditions, the effectmicrocapsule embedding is best, the embedding rate was84.18%, at the same time, oxidation resistance is better than rice bran without mirocapsules.
