This paper consists of three chapters.The first chapter describes the definition,features and effects to people’s healths ofpigment. It also introduce the research advance in recent years and the prospect to the future.The second chapter is that a method using high performance capillary electrophoretic forthe direct determination of Amaranth and Brilliant Blue in wine was developed. The effects ofdifferent types,pH,concentration of running buffer and organic additives on the separationwere investigated. The Amaranth and Brilliant Blue in wine were determined under optimizedconditions. The method is simple and accurate,and it can meet the demand of real sampleanalysis without any sample pretreatment.The third chapter is that a method of capillary electrophoresis with indirect ultravioletdetection was developed for the determination of aluminum ion in water. The effects ofdifferent buffer types,pH,concentration of background reagent,and organic additives on theseparation and detection were investigated.The method has been applied to the determinationof aluminum ion in real samples under the optimized experimental condition. The resultsshowed that the method is simple and accurate. It is suitable for the determination of thealuminum ion in water....
