During recent years,China's wine industry has got a great achievement.But the product quality varied greatly.The law makes it clear that the use of colorant is restricted in wine.But unscrupulous businessmen may lie to their customers to make fake and inferior products.Pigment was illegally added to wine.There is considerable evidence that wine is the same as that some of the natural pigment.However,the prior method can not make a judgment on the exogenous natural pigment.We need to innovate detection methods and quality management system,to ensure the safety.Research of meteorological data anthocyanins for Building wine and natural pigment.A method of determining anthocyanins in wine was established.After research,author concluded as follows:1.The anthocyanin detection mechanism and its applications in red wine were reviewed in this work.Based on the principle and classification of the spe.A method of determining anthocyanins in wine was established.The qualitative and quantitative analysis was investigated by HPLC.12 major anthocyanins in wine were determined.2.The compositions and contents of anthocyanins were detected.Based on the hplc and lc-ms-ms,A method of determining anthocyanins in wine was established.The results indicated the major constituent were cyaniding-3-glucoside and peonidin-3-glucoside in wine and black rice pigment.Based on the previous study,we deteceted different cultivars wine from different areas.Moreover,the ratio reached 1:2,which will support to detect adulteration wine.3.The method was validated by the established detection methods to verify safflower yellow pigment.The results indicated the major constituent were hydroxysafflor yellow A and Saffiomin A in wine.Based on the previous study,we established detect HPLC method,liquid chromatography tandem mass spectrometry method.
