The present research work is designed to determine the appropriate process conditions for producing Zinc gluconate using enzymatic method with specific reference to the dual-enzyme Glucose Oxidase (GOD) and Catalase (CAT). In addition, it aims at optimizing the process and the results have proved that this work can be a good source of reference for large scale or industrial production of Zinc Gluconate. Furthermore, this research work mainly focuses on a simultaneous deep discussion and optimization of the parameters involved in the production and crystallization of Zinc Gluconate among them enzymes and raw material concentrations, pH, temperature, air flow velocity and zinc gluconate formation in the medium. In this thesis, we mainly studied the following aspects:(1) Based on the studying of the glucose and catalase, glucose concentration, pH, temperature, air flowing, we got the optimum conditions for Zinc Gluconate production are:glucose oxidase1.0%(w/w), catalase0.8%(w/w), glucose concentration:30%(ds), pH~6.0, temperature35℃, air flowing rate5L/min.(2) Based on the single factor and orthogonal experiments, we found that optimum parameters for Zinc Gluconate crystallization are as follows:glucose oxidase1.0%(w/w), catalase0.8%(w/w), zinc glucose concentration:30%(ds), temperature:0℃,alcohol20mL(relative to0.2mol gluconic acid), crystallization period:5hours.(3) The melting point and IR determination of the product that we got by the novel process shows:the product is zinc gluconate, its purity is high. The product quality accords with the GB8820-2010’s specifications and meets various indicators of food additives fully.(4) This new process has some advantages over the traditional fermentation methods, among them:little investment requirements, easy to get raw materials, simple process and operation, shorten production period, environmental friendly, high purity product, etc.
