ABSTRACT:In this study, with the white sesame as raw material, response surface methodology was employed to optimize the subcritical extraction process of sesame oil. While the oil yield and content of lignans being as index respectively, the optimal process parameters were obtained, and the physical and chemical properties of sesame oil were analyzed. This study achieved favorable results and had great significance on raising of the level on the sesame oil production technology.With the oil yield as index, the process conditions were optimized by single factor experiment and response surface experiment. The optimal process parameters were obtained as follows:the extraction temperature50℃, extraction times5, ratio of material and liquid was1:3.3(g/mL).Under the optimal conditions, the oil yield was50.15%, the extraction rate of oil was96.52%, and the content of lignans was8.75mg/g.When using the content of lignans as index, the process conditions were optimized by single factor experiment and response surface experiment. The optimal process parameters were obtained as follows:the extraction temperature42℃extraction times5, ratio of material and liquid was1:2.5(g/mL). Under the optimal conditions, the content of lignans was8.86mg/g, the extraction rate of lignans was93.35%, and the oil yield was48.56%.The physical and chemical properties of the unrefined oil were analyzed, it showed that the acid value was1.2mgKOH/g, peroxide value was3.1mmol/Kg, residual solvents content in the oil was20mg/Kg, and it met the national standard of crude sesame oil. Compared with the6#solvent extraction method, the physicochemical properties of sesame oil extracted by subcritical extraction was better and the oil yield was higher. The subcritical extraction also had some advantage over the cold pressing method and supercritical CO2extraction method in the oil yield.
