Grains, beans, oilseed and its finished or semi-finished products are called Cereal andOil food, it is the basic material conditions for human survival and development, food securityis not just related to the health and life safety of the people, but also directly related to thesocio-economic stability and development.For cereal food, the main pollution is mycotoxins contamination. Not fully dried grainor the high storage temperature and humidity will make mycotoxins grow rapidly. On onehand, The mycotoxins can directly lead to the spoilage of agricultural products, the loss ofnutrients and reduce the quality of the product. On the other hand, mycotoxins have a hightoxicity to any kinds of animal. Through inhalation and skin contact or ingestion ofcontaminated food, animal will infect the toxic symptoms, just like pathological changes, andphysiological metamorphosis.Major pollution performance of the oil food is the excessive use of food additives andillegal additives added. Illegal food additives is prohibited by the nation in food, foodadditives used in China are mostly artificial composites. Excessive addition of food additivesor using of illegal additives out of the additives list will cause varies degrees hazards tohumans.Therefore, it is necessary to determine mycotoxins, food additives by the methods ofqualitative and quantitative. In this paper, we used a simple, rapid, and efficient pre-treatmenttechnology, and combined with HPLC-MS/MS to develop qualitative and quantitativeresearch on a variety of mycotoxin, food additives and illegal additives. The main results andconclusions are as follows.1. A high performance liquid chromatography-tandem mass spectrometric(HPLC-MS/MS)method was developed for the determination of8kinds of mycotoxins (aflatoxinB1,aflatoxin B2,aflatoxin G1,aflatoxin G2,fumonisin B1,fumonisin B2,sterigmatocystinand roquefortine C)in cereal. The sample diluted by hexane to remove the oil, extracted by60%acetonitrile. The acetonitrile layer was made up to constant volume and passed throughthe filter before tested. The detection of target compounds was performed on the electrosprayion positive mode and multiple reaction monitoring(MRM) mode,and quantitated with the isotope dilution assays, The result indicated that the8compounds showed good linearrelationship in the certain concentration range, with correlation coefficients of greater than0.9970. The average recoveries ranged from77%to123%, with relative standard deviationsof0.6%-13.3%. The method was proved to be rapid, sensitive.2. A high performance liquid chromatography-tandem mass spectrometry(HPLC-MS/MS)method for determination of18kinds of food additives and9kinds of illegaladditives in vegetable oil and seasoning oil had been developed. Samples were diluted byhexane, extracted by acetonitrile and the acetonitrile layer was made up to constant volumebefore tested the18kinds of food additives. Hexane layer was concentrated before itcleansing through GPC, and the eluent was concentrated, made up to constant volume, at lastthe treated samples used HPLC-MS/MS assay. In the electrospray ion mode and MRM mode,27kinds of compounds in the range showed a good linear relationship, linear coefficientswere greater than0.983. The average recoveries ranged from78.2%to108.3%, the relativestandard deviation was within0.9%-17.7%.3. Real samples which bought from Beijing’s market were analyzed according to theexperimental conditions. The results were no illegal additives found, and the food additivesand mycotoxin had been found in the samples. However, they were below the critical valuedefined in Chinese National Standard and European Standard.
