This research developed a hygienical functional flexible packaging canned on the basis of lotus seeds adding other accessories with hygienical function.This topic utilized TA.XT plus texture analyzer,using the Orthogonal test,Sensory evaluation of Fuzzy mathematics methods and HACCP in the application of the canned lotus seeds. Finaly,The optimal production process have been studied and medicinal food production with good taste have been made.we obtain the following conclusions.1. In order to solve the technical problems of starch aging of the canned lotus seeds,this topic adds a certain amount of starch anti-aging agent,such as trehalose,Single food vinegar and Guar gum.The TA.XT plus tests showed that the starch anti-aging agent can reduce the hardness of lotus seeds with different levels and delay the appearance of backing to raw taste,and the time backing to raw flavor delayed to90days.Through orthogonal test, we concluded that the optimal formula is:two point zero percent of trehalose,zero point zero five percent of single food vinegar,One point zero percent of the guar gum.2. We choose lotus seeds,medlar and tremella as the main raw materials for the study of medicinal foods development. This study designed three kinds of formula:Sample A,Sample B and Sample C,then determined the best combination of the products through the fuzzy mathematical analysis.This study choose four indicators that colour and lustre, organization form, texture, taste and smell as evaluation objects,using five levels scaling(Very good, good, average, poor, very poor) and quality grade evaluation criteria of canned to conduct sensory evaluation in order to determine the optimal formula of the Lotus seeds of medicinal food are:lotus seeds’35%、fructus lycii10%、tremella10%、sugar (white granulated sugar、crystal rock sugar50%seperate)20%。.3. The research of stability of the canned lotus seeds and production process.The results found that when the storage time of the canned food with soup is a little longer,it is easy to appear phenomenons like fat rise and the solid particles sink such as proteins,which seriously impacts the commodity value and appearance quality of the products.According to these phenomenons,this experiment used0.22%emulsifier whose HLB for11.68(monoglyceride:sucrose ester=3:7),0.09%CMC,0.09%Xanthan gum,0.18%seaweed gel and8%-10%sugar,beverage pH was controled between6.0-6.5,homogeneous temperature controled between60~65℃sterilization20min at116℃can get uniform and stable Lotus seeds drinks.4. Discussing HACCP system of production process of mini canned Lotus seed medicinal foods.Throughout the HACCP in the whole process of the production of lotus seed medicinal food cans,formulated the processing work orders for hazard analysis and HACCP plans of mini cans of Lotus seed medicinal food, which lay a solid foundation for mass production of lotus seed medicinal food cans.We get the CCP1:fillings CCP2:Vacuum sealing、CCP3:sterilization、CCP4:Metal detection.The weight of mini can is about100g in foreign countries.Due to the characteristics of moderate weight, easy to carry, rich nutrition, and environmental protection packaging materials, the mini canned lotus seed is widely welcomed by consumers. So the production of mini canned foods will have a huge potential market at home and abroad.
