Chinese distilled liquor, known as Chinese White Spirit, is one of the world’s eight distilled liquor. Chinese White Spirit has one thousand years of brewing history with unique traditional process, but the White Spirit’s production has a wide difference on taste, appearance and liquor style due to production workshops, production seasons, raw materials and other factors. While liquor blending makes it possible to stabilize and unite the content ratio of each ingredient in the liquor, and to achieve uniform flavor, taste and quality of blended liquor. Therefore, liquor blending is a crucial stage of liquor brewing process, and to improve the automatic and intelligent level of liquor blending process has a greatly practical significance for liquor’s production. In this paper, the key technologies of intelligent blending for liquor are researched and analysed, such as blending formula design, blending devices and automatic control of blending process, and the intelligent blengding system is bulit. The main work and innovations of this paper are as follows:(1) For the problem of liquor blending formula’s design, the multi-objective optimization algorithm based on neural network is put forward, which is applied to blending formula’s computation, as "input" part of the intelligent blending system. Firstly, the model of liquor blending formula is establied based on multi-objective optimization algorithm for the process of designing the fomula, and the multi-objective programming algotithm is optimized based on the structure of the neural network, thus the priority factors are obtained for solving the multi-objective programming model, then the optimal solution to the liquor blending formula model is built, which is the liquor recipe. Then the intelligent algorithm is tested through simulation using the neural network toolbox in MATLAB, the result shows that the algorithm has good convergence, a more accurate solution to the formula, thus reducing the cost of blending process.(2) For the issue of liquor blending’s realization, a set of online pipe blending facility (Patent No. CN103031241A) is invented and an automatic control system for the liquor blending process is designed, as "realization" part of the intelligent liquor blending system. The online pipe blending device breaks the traditional blending method of blending tank, achieving an online, continuous, homogeneous pipe blending mode that is the new technology of liquor blending. The device is innovatively designed from three aspects of feeding section, trace additives feeding section and pipeling-mixing section, moreover the separated angle pipe inlet, the radial jet pipeline, the static mixer, etc. are detailedly designed and theoretically calculated, making the added wine form violent turbulence in the pipe. Meanwhile, the more intense mixing is realized through effect of convection, vortex and anti-vortex among wines. The automatic control system based on Siemens S7-300is eatablished to automatically and precisely add and transport wines, making liquor blending process automatic, intelligent.(3) In this paper, the entire pipeline system is simulated and analysed using the professional hydrodynamic simulation software FLUENT. The speed cloud map, volume cloud map and pressure contours cloud map of global and local Pipeline are gained through simulation. What’s more, the feeding section, trace additives feeding section and pipeling-mixing section are respectively numerically computed and simulated, and the mixing condition is calculated respectively in different convergence angles and speed ratio, and even the wine flow patterns of the radial jet pipeline and the static mixer are analyzed, which verify the rationality and enforceability of pipeline design that enhances mixing and diffusion effect of wines and acquires a more precisely reciped wine.The intelligent blengding system is consisted of the intelligent design system of liquor recipes, the online pipeline blending device and the liquor blending control system. Theoretical analysis and simulation results show that the intelligent blending system of Chinese distilled liquor can effectively improve the accuracy and rapidity of liquor blending formula design, and improve the efficience, continuity and automatic degree of liquor blending process, furthermore greatly reduces the covered area and energy comsuption of the entire system to achieve the goal of energy conservation and emissions reduction, which has practical value to liquor production.
