In1973, World Health Organization confirmed that the selenium is an essential trace element for people and animals. However, selenium supplement has never been valued so much as calcium supplement or iodine supplement in our country for long time. The Chinese Nourishment Academic Association proposes that every adult should keep a dose of50-250microgram selenium every day. Selenium supplement is of importance and how to take safe selenium supplement is of more importance. In fact, China is a nation of low selenium. About70%of China’s territory areas all belong to low-selenium regions, and in the provinces of Jiangsu, Zhejiang and Anhui, selenium shortage exists to different degrees.This paper test to feeding for2weeks after the young duck as the research object, by adding selenium element to the duck feed, and obtain selenium-rich duck. On the basis of this study, the specific study of different concentrations of selenium in feed for duck effects of weight change, when fed a toxic reaction and slaughtered in different parts of the detection results of selenium content.This thesis experiments with the cherry valley ducks that are fed with the feed containing a1.0,2.0,2.5,3.0,3.5,4.0,5.0mg/kg (mg/kg) inorganic selenium (seleninic selenium) and ducks’gizzards, hearts, livers, breast meat and blood are tested for the selenium ratios respectively. Results show that experiment group (1.0,2.0,2.5,3.0,3.5,4.0,5.0mg/kg) ducks have much higher selenium ratio in those tested parts than the control group (0mg/kg). Based on the observations of ducks life habits and temperament and changes of weights, it is confirmed that2.5mg/kg inorganic selenium is the best selenium concentration to raise selenium-rich ducks.After obtaining the selenium-rich duck meat, according to the development of studies on cold fresh meat in our country, market share of cold fresh meat has been expanding year by year in the large supermarkets such as Suguo supermarket in Jiangsu. With the deepening of reform and opening-up as well as our country’s rapidly developing economy, people’s meat consumption level is bound to enter into a higher stage, and cold fresh meat will develop in an unprecedented way since it possesses the advantages of freshness, nourishment, hygiene and convenience.Therefore, this paper continue to cold fresh duck as the carrier using composite modified atmosphere packaging, different proportion of mixed gas filling packaging, the packaging container air for gas replacement, changing the packaging container of cold fresh duck duck gas environment, slow metabolism rate, inhibit bacteria (microbes) the growth and reproduction, thus extending the selenium-rich duck preservation period and shelf.This experiments are divided into4groups named Ⅰ,Ⅱ Ⅲ and Ⅳ. the ratio of gas to100%CO2respectively (high CO2concentration control),70%CO2/30%N2,50%CO2/50%N2and30%CO2/70%N2(low CO2concentration control).4groups of samples into storage after zeroth,5,10,15,20,25and30day of each of the3package samples for analysis, survey sample sensory quality, the total number of colonies, TVB-N value and pH value and other parameters. To determine the proportion of the mixed gas is70%CO2/30%N2achieved the best storage, preservation effect.Finally, by means of cold chain logistics technique, cold fresh duck products can be extensively put on the market, and thus the biotransformation of selenium is effected in a safe, efficient, maximal way so as to achieve selenium supplement for human bodies.
