Food industry is one of the important part of China’s service industry, and it is closelyrelated to people’s lives.With the deepening of the reform in our country, the catering markethas developed fast in China.Some foreign catering enterprises and privatecatering enterpriseshave gained great achievement. On the contrary, many Chinese historical enterprises andstate-owned catering enterprises have been facing with severe situation. Taken themanagement transformation of Guangzhou restaurant group co., LTD.for example, on thebase of theory as well as practice, this article is trying to analyse this problem. So that we canprovide a feasible and systemic scheme for Chinese historical enterprises and state-ownedcatering enterprises.This article consists of five parts: First part defines the concept of managementtransformation、Chinese historical enterprises and catering enterprises, analyzes the overallstatus of catering industry, in view of the Chinese historical enterprises operating difficult andthe plight of the reform of the state-owned catering enterprises, put forward the problem ofthe management transformation of guangzhou restaurant.Thus we expounds the researchpurpose and practical significance.We also put forward the research content and researchframework. Then the thesis discusses the theoretic basement of the change managemen of theGuangzhou restaurant. Third part starts with analysing the general situation of Guangzhourestaurant、main business、organization structure,keep contact of the actual situation ofguangzhou restaurant, through PEST analysis and SWOT analysis, analyses the internal andexternal environment of guangzhou restaurant.Then through key factor evaluation matrix(EFE) and SWOT comprehensive analysis matrix, the conclusions are given.The forth part ofthe thesis introduces the chagnge of guangzhou restaurant from the macro and micro aspectsin detail, which is the focus of this article.The last part researches and analyses the relevantguarantee measures of state-owned catering enterprises in our country conbining with thepractice of Guangzhou restaurant. As a result, we explore a feasible way for the changemanagemen of the state-owned catering enterprises.
