Selenium has very important physiological significance for human body health. China is lack of selenium, so the supplementation of selenium becomes very important. Organic selenium has faster absorpotion ratio and conversion ratio than inorganic selenium. Organic selenium has high ernutritional value. Organic selenium is the first choice as the supplementation of selenium for human health now.Lactic acid bacteria grow very fast,have strong reproduction,have fast metab oli-sm,have strong ability to adapt.Lactic acid bacteria have more advantages in regulating intest inalflora, providing nutrients to our human body.This study use Lactic acid bacteria to enrich se lenium.Inorganic selenium is translated into organic selenium by microbe.This study provides the oretical basis for production of seleniumrich food and supplementation of selenium. The experimental strain was Lactobacillus bulgaricus L5, Lactobacillus bulgaricus L9,Lactoba cillus plantarum 09004,Lactobacillus acidophilus 08001,mixed strain of Streptococcus 3.3 a-nd L actobacillus bulgaricus L9,mixed strain of Streptococcus 3.3 and Lactobacillus bulgaricus L9.The study Used live bacteria plate colony counting method to determine the influence of selenium concentration of Lactic acid bacteria growth.Compare two determination of selenium method:sup ernate difference value method and direct method. Choosed the better method to determinate the selenium.Using 3,3’-diamino benzidine colorimetric method to determine selenium-enri-ched bility of single bacteria lactic acid and mixed bacteria.The study researched the influenceof fer mentation condition on seleniu.This study investigated the the influence of selenium concentrations on Lactic acid bacteria growth.The study Used live bacteria plate colony counting method to draw the growth curve of lacticacid bacteria in the MRS containing different concentrations of selenium.The study also an alyzed the production of acid of strains through determining the pH. Selenium made lactic acid bacteria growth become slow but Lactobacillus acidophilus 08001 grew very well in MRS con taining with 10μg/mL selenium.The results showed that Lactobacillus plantarum 09004 and Lactobacillus acidophilus 0800 1 had higher resistance to selenium concentrations.It could be nearly 10μg/mL.When the fermen-tation time was 36h,these two strains’selenium-enriched abiliity could reach the highest level.T-he selenium-enriched abilitity of Lactobacillus acidophilus 08001 is 66.37% and the selenium-e-nriched abilitity of Lactobacillus plantarum 09004 is 55.81%.Compared with the other single st rains fermented in MRS, Lactobacillus acidophilus 08001 had the best transformed ability.This study also analyzed the selenium-enriched ability of single and mixed strains in the MRS with different selenium concentrations in the process of fermentation.The mixed Streptoco-cus 3.3 and Lactobacillus bulgaricus L5 had better selenium-enriched ability.The conversion rat-e of this mixed strain is 70.44% in 60h.Then the selenium-enriched ability of Streptococcus 3.2 is less better than the mixed Streptococcus 3.3 and Lactobacillus bulgaricus L5 and the conv-e rsionrate of it is 66.09%.The ability of mixed Streptococcus 3.3 and Lactobacillus bulgaricus L 9 is 50.08%.So the selenium-enriched ability of mixed Streptococcus 3.3 and Lactobacillus bu-g aricu-s L5 is the highest among these three strains.The study choosed Lactobacillus acidophilus 08001 which had the highest selenium-enriched ability among single strains to investigate the influence of fermentation condit ions on seleniumu-enriched ability.We found that its selenium-enriched ability could be enhanced to 5.7% whenthe saltconcentration is 2%.The conversion rate is 70.51%.
