In recent years, certain progress was made in the research area of seed melon by-product utilization, however, there has been less research on the clarified concentrated seed melon juice. Xinjiang is the important seed melon production base of northwest China, it ranked first regarding production area and amount in the nation. At present, seed melon is mainly cultivated for obtaining its seed, and the proportion of 90%~92% melon pulp is considered as waste that caused great losses.In this paper, different methods of clarification and concentration process were applied to study clarified concentrated seed melon juice, and determined the optimized parameters according to light transmittance and the variation of main components after concentrated. Estimated clarified concentrated seed melon juice cost, profits and other economic benefits, the results showed that production projects had a low investment, high-profit and it is feasible in technological condition. This product, can not only improve the utilization rate of seed melon by-products, but also solved environmental pollution problems and wasting of resources caused by seed melon by-product, besides, it played a positive role to improve the economical efficiency of agricultural products and enterprise income.In this study, seed melon(No.I) was used as the raw experimental material, used light transmittance as indicator, through single factor and response surface experiment, determine the optimum parameters of seed melon juice clarification which is 53mg/100 g of pectinase, adding 70mg/100 g cellulose, clarify time is 60 min and clarify temperature is 54℃, under this condition the light transmittance of seed melon juice is 98.8%. In the process of making seed melon juice into clarified seed melon juice, 28 kinds of volatile aroma components including methyl oleate ester were lost, in the mean time, 20 kinds of aroma components including 2-Butanol, 3-methy added in. Observation on the impact of two ways of concentration on the quality of clarified seed melon juice has been made, results showed that, with the increasing concentration, freeze concentration had little impact on color change and browning degree, less loss of Vc, which can keep aroma substances in clarified seed melon juice. Microfiltration membrane filtrationhas been used for sterilizing the bacterium in clarified concentrated seed melon juice, achieved the optimal process parameters, the results showed that: 0.2MPa of pressure, 25℃ of temperature, 30m/s of veloctity, at this point, the retention rate of Vc, total sugar and the total acid in aseptic clarified concentrated seed melon juice after sterilized were 98%, 98%, 97%, respectively, the total number of colonies were greatly reduced, only one kind of aroma components lost. The freeze-concentrated clarified seed melon juice after micro filtering the bacteria were respectively arranged at 4℃ and 20℃ under the conditions of storage for 90 days. The fruit quality in 4℃ was better than that in 20℃ and both of them were relatively stable. Therefore, clarified concentrated seed melon juice has not only high nutritional value, good stable quality, but also the process conditions are feasible, can improve enterprise revenue and provide theoretical foundation for continuous production.
