Experiments were carried out with ’Zaoheibao’,’Muscat Hamburg’ and ’Crimson seedless’ grapes to investigate the effect of different preservatives on their postharvest quality and change of physiology. At the same time, we also researched the relationship between conformation structure and storage character of three species. The mainly obtained results were as follows.1. At the experiment of Zaoheibao Grapes, the result showed that:compared with the control, preservative treatments were more effective in terms of senescence inhibition and postharvest quality maintenance. The best storage quality was found in the Zaoheibao Grapes of 5 packets of CT2 troche+2 packets of CT5 pulvis (3#) treatment.5 packets of CT2 troche+2 packets of CT5 pulvis treatment showed better effects on delaying the consumption of nutrients, inhibiting the accumulation of MDA and PPO activities, reducing decay, berry drop and weight loss than other treatments. In addition,5 packets of CT2 troche+2 packets of CT5 pulvis treatment showed the highest sensory scores among all samples. In this combination, Recommended to store 60 days or less.2. At the experiment of Crimson Seedless Grape, the result showed that:preservative treatments significantly reduced decay, berry drop, weight loss and delayed the decline of total soluble solids, titratable acidity and ascorbic acid. Moreover, the results also showed that preservative treatments had a good effect on inhibiting the accumulation of MDA and PPO activities, maintaining POD and SOD activities, thereby deferring senescence process and extending the storage time. All in all, Red globe grape preservative (7+1) showed the best storage quality. In this combination, Recommended to store 100 days or less.3. At the experiment of Muscat Hamburg Grape, the results showed that:compared to other samples, grapes in 8 packets of CT2 troche+1 packets of CT5 pulvis treatment showed smaller increases of respiration intensity, MDA and relative leakage rate; smaller decreases of total soluble solids, titratable acidity and ascorbic acid. In addition,8 packets of CT2 troche+1 packets of CT5 pulvis significantly suppressed PPO activities and induced defense-related enzymes activities, such as POD and SOD. Meanwhile,8 packets of CT2 troche+1 packets of CT5 pulvis treatment significantly maintained sensory attributes of Muscat Hamburg during long-term storage, as manifested by fruit color, flavor and overall preference. In this combination, Recommended to store 100 days or less.4. By investigating the relationship between conformation structure and storage character of three species, the good storage property varieties usually have the following characteristics:(1) the cluster of grapes is small and loose. (2) the good storage property varieties have thicker pericarp and harder pulp, as well as combining closely between pericarp and pulp. Meanwhile, berries of these varieties have stronger maximum pressure. (3) the good storage property varieties have more bulky fruit stalk and fruit binding, as well as smaller the total berry weight per unit area of stalk and stalk binding area. In addition, these grapes also have the bigger pulling force of fruit stalk.
