Apios americana Medikus is a a kind of leguminous plants, it not only rich in protein, fatty acids, vitamins and minerals, but also have variety of bioactive components, such as isoflavone, trypsin, lectins and so on, which is a high energy, high nutrition food. Gardenia- a kind of Chinese traditional medicine in our country, belonging to the first batch of medicine edible promulgated by Ministry of Health- has a wide application value, which contains iridoids, saffron, flavonoids and other various function compositions. This paper used Apios americana Medikus and gardenia as raw materials in order to develop a new golden plant protein beverage. The main contents of this paper are as follows:1. Based on the best water ratio of 1:20, the optimal enzymatic hydrolysis process of Apios americana Medikus juice is: enzyme dosage 50U/g, enzymatic hydrolysis p H 5.5, enzymatic hydrolysis temperature 93.4℃, enzymatic hydrolysis time 46 min, which was indexed with the reducing sugar content, analyzed with the single factor and response surface.2. With the protein extraction rate of Apios americana Medikus as the index, the optimal extraction by alkali extraction and acid precipitation method as solid-liquid ratio 1:10, alkali soluble p H 10.5, extraction temperature 45℃, extraction time 3h, acid precipitation p H 2.5, through the single factor and orthogonal experiments.3. With degree of substitution as the index, the optimal extraction process of octenyl succinic anhydride Apios americana Medikus starch was determined by Aqueous phase method, through the single factor and orthogonal experiments as: starch concentration 35%, octenyl succinic anhydride concentration 3%, dillution 7 times, reaction temperature 35℃, reaction time 5h. Using octenyl succinic anhydride Apios americana Medikus starch and gardenia oil whivh were all made in our lab as raw material, the optimal extraction process of emulsified gardenia oil was determined as conentration of octenyl succinic anhydride Apios americana Medikus starch 0.24%, Emulsifying time 3min, Emulsifying temperature 50℃, p H 7.56.4. With Transmittance and sedimentation rate as the index, the optimal formulation of emulsifier in deployment of Apios americana Medikus juice is determined as glycerin monostearate-Sucrose ester ratio 4:23, dosage 0.08%, and the optimal formula of stabilizer is: carrageenan alone, dosage 0.04%.What is more, the optimal adding amout of gardenia meal and white sugar is 0.08% and 4%, using simple sorting method and scaling method..
