In this study,grapefruit peel as crude material, grapefruit oil was extracted by steam distillation, avoid the waste of raw materials in production. For effective utilization of grapefruit plant resources, development of natural food antimicrobial and antioxidant. Anti-microbial activity and anti-oxidation activity of grapefruit oil in vitor and chemical constituents of grapefruit oil were studied in order to tap the potential and prove its worth. The grapefruit oil nanoemulsion can protect active ingredients of grapefruit oil, increase its stability and overcome defect of insoluble in water, increasing its field of application.We used gas-chromatography mass spectrometer technology (GC-MS) analysis of the chemical constituents of the grapefruit oil which extracted by steam distillation. Anti-microbial activity and anti-oxidation activity of grapefruit oil in vitor were studied. The grapefruit oil nanoemulsion was produced and examine its instability. The conclusion is as follows:1 The experiment conditions (experiment time,solid/liquid radio and the addition of NaCl) of steam distillation experiment method were discussed based on the single factor experiment and combined with orthogonal experiment. The results showed that the yield rate of grapefruit oil could reach up to 1.28% by the optimum conditions: experiment time,120 min; solid/liquid radio,1:4; addition of NaCl,5%.2 The grapefruit oil which extracted by steam distillation is pure and colourless, specific gravity 0.8449, indaxl.4713,pH5.69. There were 47 kinds of compounds in the grapefruit oil that was analyzed through GC-MS, about 92.53% of the total. The grapefruit oil has shown strong antimicrobial activity and antioxidant activity.3 Through the experiment the surfactant has been selected, it is the mixed surfactants of nonionic surfactant Tween-80 and Speen-80,in which HLB is 13. Choose the glycerol to be cosurfactant, Km5:1. The grapefruit oil nanoemulsion was produced through phase inversion and ultrasonic, clear and transparent, it is O/W nanoemulsion with good mobility. Its average diameter was 21nm, in uniform distribution. In the study of stability of nanoemulsion, stability parameters、long-term storage and high temperature processing experiment show that grapefruit oil nanoemulsion has good stability.
