Chlorella contains a large amount of EPA (Eicosapentaenoic acid), which is a good source of access to the EPA. EPA has many biological functions, including immunoregulation. The topic is based on the chlorella’s (C95) culturing, enrichment and determination of EPA. Then chlorella vermicelli was developed and was studied its immunological activity in mice. Now, under the background of environmental deterioration and people with hypoimmunity, to research and develop new chlorella products -- chlorella vermicelli and study its immunocompetence has important significance.The highest biomass of chlorella measured by microscopic counting method is 7.03×107/mL. In the best chlorella’s harvesting period, the biomass of chlorella is 6.30×107/mL. Chlorella fat was extracted and measured and it accounted for 18.2% of chlorella dry weight. The EPA was measured by GC accounted for 23.63% in the fat content. Combined with the sensory evaluation as well as the texture analyzer determination results, the best chlorella vermicelli production conditions were determined that the ratio of fernery starch, corn starch and potato starch is 3:1:1; chlorella percentage was 6%; water percentage was 75%; thickening proportion was 8%; curing temperature was 100℃; curing time was 70s; CMC Na - adding amount was 0.6%; the modified starch contentwas 15%; the salt content was 1.0%(Above is the ratio of mixing starch.)The chlorella vermicelli immunoregulatory activity was evaluated by experiment in the mice. The results showed that the immune function in mice could be reduced significantly by cyclophosphamide, but the degree of low immunity caused by cyclophosphamide could be reduced by chlorella vermicelli. The damage of cyclophosphamide on spleen and thymus of mice could be suppressed by chlorella vermicelli; also the influence of cyclophosphamide on cell-mediated immunity (T/B lymphocyte proliferation activity, DTH), humoral immunity (hemolysin antibody concentration), monocyte - macrophages (macrophage proliferation rate, phagocytic activity of macrophages), natural killer cell (killing activity) could be relieved by chlorella vermicelli. The enzymatic activity of splenic LDH and ACP, macrophages lysozyme in mice were detected through kit method. The expression levels of mRNA of spleen cellular immune factors (IL-2, IL-6, IL-12, TNF-α, IFN-y) and macrophage immune factor (IL-1β, IL-6, IL-12, TNF-α, IFN-y) were determined through the method of RT-PCR. The results showed that the mice feed with chlorella vermicelli could significantly reduce the impact to several enzyme activity and the expression level of immune cytokine mRNA in mice, which was brought out by cyclophosphamide. What the paper showed is that if the mouse was fed with chlorella vermicelli 10 g/kg everyday, it would have epiphylaxis to the immunologic mjury caused by external factors.
