With the development of the agricultural products processing technology, an increasing scale of root vegetable being as materials of drugs, health care products, additives. Carrot have became the focus of root vegetables processing because its unique taste and multiple nutrition. Micro-crushing process could refine carrots and promote nutrient release from inner. Crushing is a main processing method of carrot. In order to solve the reunion phenomenon in carrot powder processing and improve the processing quality, the study based on natural science funds of Liaoning province (2013020062), rhizomes plants micro-grinding machine and principle under high voltage electrical field, the study have done the experiment in the dispersing device which be applied high voltage electric field, the research content included:(1) Research in the forming principle of powder reunion phenomenon and general ways to improve the reunion phenomenon. Through the study of powder reunion phenomenon, the forming reason of carrot powder reunion have been included, the feasibility and advantage of high-voltage electric field method to improve the powder reunion have been researched.(2) Experiment of carrot high-speed crushing. In study, the crushing period time have been as factors, the powder particle size, temperature, moisture content changes and carotenoid content changes as evaluation indexes. The test result showed that reunion phenomenon in high-speed crushing process is obvious. With the 98.53% rise in temperature and 1.658% moisture content change in crushing process the favourable factor of reunion phenomenon have been created. As the same time the carotenoid content in carrot powder reduced 71.25%.(3) Static resistance reunion experiment. The self-designed carrot powder processing equipment have been used in study. The treat voltage and period time of processing been as the test factor and the percentage of particle size less than 125μm been as the evaluation indexes. The study included single factor experiment and quadratic regression orthogonal experiment. As the test results shown, the voltage and time have the appreciable impact on the evaluation index. The optimum process parameters for the test is:treat voltage 45kv, treat time 60min, in the same time the percentage of particle size less than 125μm is 77.41%.(4) Dynamic dispersion test. The dynamic dispersion test device have been used in experiment. The treat voltage and feed quality in 10s been as the test factor and the dispersity been as the evaluation indexes. The study included single factor experiment and quadratic regression orthogonal experiment. The results shown that both the voltage and the feed quality in 10s has significant influence on powder dispersity. Through calculate programming solver result of regression equation the optimal process parameters for processing is:voltage 25kv, feed quality in 10s is 6.61g, as a result the powder dispersity rose to 31.47%.In the study, the theory of high voltage electric field mechanism of action as basic theory, test analysis as the main method, the experiment study on resistance reunion capability of carrot powder under high voltage electrical field have been researched. The study result can provide a theory reference for improving the efficiency of the carrot powder processing.
