China is the largest countries of producing wheat, 2.8 million tons of wheat germ can product per year. Wheat germ is the vital organs of wheat grains, and it contains a wealth of nutrients for the wheat,which is important for the development and utilization of wheat germ. Now, for most of the development and utilization of wheat germ based on extraction of wheat germ oil, the rest of defatted wheat germ used for animal feed, fail to achieve the full utilization of wheat germ. The usually wheat germ oil extraction technology is solvent extraction method, exploration and research of new oil extraction technology is the trend.This research, wheat germ as raw materials to enhance the economic practical value of wheat germ for purpose of exploring the influence of supercritical CO2 extraction technology on wheat germ oil extraction rate, and its quality analysis; through the soybean protein isolated protein and maltodextrin composite wall material, defatted wheat germ as a core material, by spray drying processing technology product wheat germ microcapsules, on which the indicators are optimized, and products for quality inspection.Using the laboratory equipment and pilot-scale supercritical CO2 extraction equipment to extract wheat germ oil respectively, through the single factor and orthogonal experiment to optimize, ultimately the optimum conditions:extraction pressure at 50 MPa, temperature at 45℃, time at 4h, in this condition wheat germ oil extraction rate reached 83%.Preparation of microcapsule by spray drying process does not cause damage to the nutritional content for the products. With the supercritical CO2 defatted wheat germ as core material, soy protein isolate and maltodextrin as wall material for encapsulating. By the single factors and orthogonal teston for the lecithin added volume, the into wind temperature, the solid shaped real concentration, the wall material and core material of than for conditions, finally get of the best spray drying process conditions is: ratio of wall material and core material as 2:1, material liquid in the solid shaped real concentration as 25%, the wind temperature in spray drying as 180℃, lecithin added volume as 1.5%, finally can get the product of solubility reached 55.24%, the moisture content for 2.1% of the wheat germ microcapsules of products.Supercritical CO2 extraction of wheat germ oil, wheat germ oil has unique smell, rich variety of unsaturated fatty acids as high as 80.27%,which content of 58.37% linoleic acid, and linoleic acid of 6.59%. Wheat germ oil content of vitamin E as 1412.55mg/kg. Phytosterol content of 2560.89mg/100 g. The protein content of wheat germ as 39.73%,which balanced of proteins,and rich in essential amino acid content. The scattered of microencapsules product test well,the microcapsules particle render sphere or oval-shaped capsule particles and surface is smooth or slightly wrinkled.
